Today I decided to have oats for lunch instead of breakfast, and eat it outside in this great spring weather! ☀️🌸
In this lovely bowl I have cooked whole oats with strawberry chia jam, a few dates and and sprinkle of shredded coconut 🌴😋🍓
The strawberry chia jam is super easy to make, you can put it on toast, healthy scones or cakes, add it to sweet dishes like oats or muesli or even use it as a topping on some tasty nice cream! It is so delicious that you will never feel the need for standard processed sugary jam again!
Here is the recipe:
Ingredients:
2 punnet of strawberries
2 tbsp honey
1.5 tbsp chia seeds
Method:
Chop the greens off the strawberries and cut each of the strawberries in half.
Place the strawberries and honey in a pot on the stove on a medium heat. Stir until strawberries start to soften and juices start to release. Use a potato masher to mash up the strawberries to desired consistency (If you prefer no lumps, you will have to put jam in blender to smooth out once finished). Once the mixture starts to boil slightly, add the chia seeds and continue stirring for approx 1 minute, then remove from stove and allow to cool for a few mins. Transfer to an airtight jar and place in fridge to cool and finish setting.
