A fisherman friend was going to throw out his unwanted fish frames... but we liberated them for fish broth!!
This isn't the prettiest photo, but OMW it smells divine!!
This recipe is so simple, delicious - and oh so French.
It's as simple as sauteeing onions, leeks, garlic and celery (or whatever is in your pantry), deglazing the pan with white wine (or vermouth), then filling up the pot with your fish heads/frames/seafood bits, topping it up with filtered water and some extras like sliced carrots, fresh parsley, bay leaves & peppercorns.
Simmer softly for about 35-45min, and strain through a fine sieve or cheesecloth. Voila!
Perfect served in a mug as a warm lunch with buttered sourdough, or as a base for fish based recipes such as curries, stews or paella. Portion and freeze it for future use - and thank me later đŸ˜˜
