Evie came to me today in tears about what has been happening in the states. She just can not fathom why the white policeman treated poor George Floyd the way he did. To be honest it is almost inexplicable.
'Because they can' isn't quite enough is it really.

I am proud on the one hand that she had the questions she did and saddened that I just don't have any answers. Other than that we can be better.

I have seen posts of people ridiculing those rioting. To that I say; there have been many times I have been so mad I wanted to punch and smash things. I can't even imagine what fearing for my life every.single.f**king.day would make me feel. This amplified by sadness and fear, doesn't seem hard to fathom really.

Anyway, not my usual kind of chatter, but my biggest platform and now is the time for tough discussion and hope for change.

Today has been bluddy hectic.
Veggie box, meetings, online training for a client, work, maths lessons x 2, beep test 🤯
So chicken and chips for the kids and Micka and I had these.
They were really pretty good. Really filling and low in calories without any rubbish additives.
Worth a try xx

Tonight's dinner was meant to be this, with baked root veg.

But there wasn't enough space in the oven so we will have it with fish tomorrow night.

Goodness. Does every teacher go to bed at 8.30 every night?? It is fecking exhausting!

I have written down my Pho recipe and hope to share it tomorrow, but until then this veg laz is epic.

If you are vegan or not able to eat dairy you can sub the ricotta for silken tofu and vegan cheese. Still.great.

Lu is making dinner tonight and has planned a Mexican feast!
She will make a half batch of the below Con Carne and I will use the rest of my 1/2 mince to do Not-Much-Meat-Balls later in the week.
I also have some Snapper [any ideas welcome!!], and will do a Pho later in the week again.
What is on your list?

Today I made Pho from scratch. Well worth it!
I will make again next week just to check the recipe and share with y'all!
These cookies are super easy for kids to make, and have gluten, dairy free options PLUS are egg free.

How is your week going? Our kids are just plodding along, kind of enjoying being the master of their own destinies.
We had this Quirky Cooking Fish Curry last night for dinner, EVERYONE loved it.
I didn't add the chili, and subbed kaffir lime for the lemongrass, and a bit of Pataks Korma paste for tamarind (too vanilla round here for anything much else, and I had an open jar in the fridge).
Anyway well worth a go!
