I haven't shared my weekly meal prep for a while... basically because I haven't been doing it! I've been going a bit more with the flow recently, partly because the school holidays gave me a little more time to prep and cook during the week. However, now that the holidays are just a distant memory, I thought I'd better get back on track.

The week ahead is going to be a busy one, so meals will be very simple.
One night, we're having salmon fillets with a couple of sides. I prepped some green beans to steam at the last minute while the salmon cooks and bought a bag of microwavable potatoes that will become a salad in no time.
I chopped up capsicum, carrots and broccoli for a quick vegetarian curry. I'll add some tofu at the last minute and cook the rice in my trusty multicooker while the curry simmers.
I also made a big pot of chicken stock. We will have chicken soup tonight, and the leftover stock will go in the freezer.
Pumpkin and beetroot are ready for a roasted veggie tray, which will be delicious with a sweet glaze and some fetta on top. I'll serve it with quinoa, which will cook while the veggies roast.
I prepped some zucchini to cook with tuna, olive oil, garlic and parsley for a speedy pasta sauce one night.
While I was making all of these, my air fryer cooked a frittata that will go into lunchboxes for a veggie-packed snack.
I also prepped some jars with oats, chia seeds, pumpkin seeds, sunflower seeds and cinnamon. In the mornings, I'll add milk, high-protein yoghurt, nuts and berries before taking them with me for morning tea.
My son has also been enjoying a veggie platter after kinder lately, so I made sure I have a variety of bite-sized veggies ready to go, including qukes, sweet peas and capsicum sticks.
