Kid friendly food always involves mashed potatoes it seems or is it just my kid?🤣
Sheperds pie is such a classic. I’ve been making it for years but adding some vegangrated mozarella from. was angreat idea and took it to a whole other level.💥 I can’t beleive I never pisted the recipe, and because i use my insta as my personnal cookboon well… here we are:
What I used:
🥔8 potatoes
🥔almond milk
🥔dash of black pepper, nutmeg and salt
🥔half a pack of violife grated mozarella cheese
🥔1tbsp butter
🥔2 cans of brown lentils
🥔1 heaping cup of frozen peas
🥔2 large carrots
🥔2 tbsp tomato paste
🥔1 veggie cube
🥔1 cup water
🥔1 onion
🥔2 cloves of garlic
🥔1 tbsp spaghetti spice mix
🥔2 bay leaves (4 if small)
👉🏼peel, chop and boil your potatoes
👉🏼while your potatoes boil chop onion, grate garmic and sautée in a deep pan or pot.
👉🏼peel and dice your carrot and add to the browned onion.
👉🏼add veggie cube crumbled, water, tomato paste bay leaves and spaghetti spice mix.
👉🏼when carrots are almost done add the rinsed lentils and stirr in.
👉🏼when carrots are fully cooked add the frozen peas and turn heat to low. Simmer for a few minutes until peas are just done.
👉🏼add mixture to a baking dish.
👉🏼make mashed potatoes by draining most of the cooking water and just keep a but in the bottom of the pot.
👉🏼mash the potatoes and add butter, spices milk and cheese until you are satisfyed with the texture. I like a super creamy, whipped texture so I add a little more almond milk and ask my husband to whisk it all up for me 😏
Put in the oven on 180C until the top is golden. This will take between 30 to 40 min depending on your oven.
