DRUID'S SOUP
Ingredients
• 2 tablespoons olive oil
• 1 medium onion, chopped
• 3 cloves garlic, minced
• 2 stalks celery, diced
• 2 carrots, sliced
• 1 leek, cleaned and thinly sliced
• 2 medium potatoes, diced
• 1 zucchini, diced
• 1 cup mushrooms, sliced
• 1 teaspoon dried thyme
• 1 teaspoon dried rosemary
• 1 bay leaf
• 6 cups vegetable broth
• Salt and pepper to taste
• 1/2 cup fresh parsley, chopped
• 1/4 cup fresh chives, finely chopped

Instructions
1. Preparing the Vegetables:
- Prepare all the vegetables by washing, peeling, and cutting them as indicated.
2. Cooking the Aromatics:
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until soft and fragrant.
3. Adding the Vegetables:
- Stir in the celery, carrots, leek, potatoes, zucchini, and mushrooms.
- Sauté the vegetables for about 5 to 7 minutes, until they begin to soften.
4. Seasoning:
- Add the thyme, rosemary, and bay leaf. Mix well to coat the vegetables with the herbs.
5. Cooking the Soup:
- Pour the vegetable broth into the pot and bring to a boil.
- Reduce the heat, partially cover, and let simmer for about 30 minutes, or until the vegetables are very tender.
6. Final Seasoning:
- Season with salt and pepper to your taste.
- Remove the bay leaf before serving.
7. Serving:
- Serve the soup hot, garnished with fresh parsley and chives for a touch of freshness.
