GUT FRIENDLY SPRING SALAD 🐟
This super filling, fresh and gut-friendly salad will leave you wanting more! Cabbage is coming in hot to feed your good-bacteria in the gut and fennel is coming along to decrease inflammation + gas in the GI tract and fight off any bad-bacteria hiding down there! 🦸🏼♀️
Recipe:
🌷1 lb wild caught salmon filet, seasoned with salt and pepper + drizzled with oil
🌷1 cup of cooked and cooked couscous (quinoa would also work!)
🌷1/2 head of green cabbage, thinly sliced
🌷1/2 head radicchio, thinly sliced
🌷1 large fennel bulb, core and fronds removed + thinly sliced
🌷2 cups of strawberries, quartered
The dressing:
🌱1/2 cup unsweetened grass-fed plain yogurt (or plant based, goat, whatever you like!)
🌱1/2 cup extra virgin olive oil
🌱 juice from 2 limes
🌱4 tsp raw honey
🌱1 small bunch of chives, thinly chopped
🌱1/2 tsp salt
🌱 1 tsp pepper
*whisk together until we’ll combined, keep in the fridge until ready to use*
1. Bake the salmon at 350F for 12-15 mins, let cool
2. On a large platter or bowl mix the cabbage, fennel, radicchio and couscous with 2/3 of the dressing
3. Place the strawberries around the salad, tucking them in around your veggies
4. Flake your salmon into 1 inch cubes and place it around your salad
