It's easy, hearty, and perfect for feeding the whole family!
🛒 Ingredients
3 cups cooked turkey, shredded
2 cups red enchilada sauce
8 small flour or corn tortillas
1 can (15 oz) black beans, drained and rinsed
1 cup corn
1 small bell pepper, diced
1½ cups shredded Mexican cheese blend
½ cup diced green chiles
1 tsp chili powder
½ tsp ground cumin
¼ tsp garlic powder
Salt and black pepper, to taste
Fresh cilantro, optional
Sour cream, for serving
Avocado, for serving
👩🍳 Directions
1. Get the oven ready:
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. Make the turkey filling:
In a large bowl, combine the shredded turkey, black beans, corn, diced bell pepper, green chiles, chili powder, cumin, garlic powder, salt, and pepper.
Give everything a good toss so the seasonings are evenly distributed.
3. Start the first layer:
Spread about ½ cup of enchilada sauce across the bottom of the prepared baking dish.
4. Add the tortillas:
Tear or cut the tortillas into large pieces. Arrange a layer over the enchilada sauce, overlapping slightly if needed.
5. Layer it up:
Add a layer of the turkey mixture, followed by some enchilada sauce and shredded cheese.
6. Repeat:
Continue layering tortillas, turkey mixture, enchilada sauce, and cheese until everything has been used.
Finish with a generous layer of enchilada sauce and the remaining cheese. 🧀
7. Bake covered:
Cover the dish tightly with aluminum foil and bake for 20 minutes.
8. Get that cheese bubbly:
Remove the foil and return the casserole to the oven. Bake for another 10–15 minutes, until the cheese is melted, bubbly, and lightly golden around the edges.
9. Let it rest:
Allow the enchilada bake to rest for 5–10 minutes before cutting. This gives the layers a chance to settle.
10. Garnish & serve:
Top with fresh cilantro and serve with creamy sour cream and sliced avocado.
