Preparing for a beach vacation as a registered dietitian is basically living my life and then going on a beach vacation. Hope this is what you needed today heading into summer/travel/beach season 🤍🤍🤍

If you know me at all, you can probably anticipate the following about my vacation:
- I will be excited to look for and eat lots of vegetables
- I will be excited to eat gelato and pasta every day

Maintaining healthy habits and enjoying more “special” foods on vacation are not mutually exclusive. To fully enjoy all a vacation has to offer, you don’t need to throw away your basics (colours, water, balance, sleep).

This one might surprise you

but my favourite protein smoothie lately has no protein powder.

What’s giving us protein and a creamy texture?

It’s tofu. 🙈

Stay with me here.

First of all you can totaly eat tofu as is without cooking it! Straight from the package- suddenly it’s the easiest protein source.

It’s plant based, super super inexpensive, it’s in the fridge but has a solid ‘shelf’ life so it’s a great back up that is there for you, it’s versatile to any flavour profile but it also NEEDS flavour so don’t skimp.

Here’s my favourite smoothie lately that sets me up for the day (and yes my kids love it too!)

For 2 smoothies:
-1 frozen banana
- 1/2 block firm or extra firm tofu OR 1 full block soft tofu -1 cup ish frozen berries
-large handful frozen greens
-pinch salt
-1-2 dates for added sweetness if you want
-pinch cinnamon
-dash vanilla
-1 heaping tbsp almond butter
-1-2 cups milk of choice (depending on how thick or thin you like it, I like mine thicker)
-2 tbsp ground flaxseeds

Blend her up and go 🥤

COOKING WITH TECH 📱 👩‍🍳

Cooking doesn’t have to be stressful, for me it’s fun, it’s meditative, it’s creative yet productive, it’s my time.

My kitchen time is made even easier and more efficient thanks to my Samsung S11 tab (thanks ! ). I get to watch my shows (most recently Off Campus but most often Great Canadian Baking Show and here NYT Cooking videos), I have a home for all my notes (that connects to all my other devices), I get another screen to follow my recipes (essential while filming), and I get the power of Gemini to help me do all the kitchen math I don’t want to do to scale recipes up or down. Something about this little pen is very satisfying too.

I refuse to let AI replace food writers and recipe developers BUT if it wants to do my math, and create my purchase orders for my classes, I’m in.

PLATES LATELY 🍽️

Long weekend edition.

It’s with pride and a little guilt I say I took as much of a true long weekend as a mom can. I read a whole book, it was a light and fun summer love story, I baked, I hung out at the park, I did nothing, I found myself bored, I sat on the floor playing. So much playing. This makes me so happy, but I’m trying to shut the business lady voice in my head up (don’t worry I’m winning).

Amidst all this of course, there was food, good food, lots of it.

1- slices
2- chopped salad, low key a fantastic salad
3, 4- coffee and croissants
5,6 - peanut ginger miso tofu bowls, latest obsession
7- burgers, because what else are you eating on the first long weekend? And a funny misshapen bun. I love these thin buns because the ratio of bread to meat just feels right.
8- pistachio white chocolate layer cake- absolutely fantastic
9- pasta with fava and pancetta - this is a staple spring dish for my in laws, worth every fava podded
10- quick steam sautéed asparagus (asparagus needs just a little heat, a little love), grilled and marinated mushrooms (I threw this together and actually loved it) and Nonna’s fries
11- you know Nonna fried these in olive oil using a fork
12- Nonna’s crostata - more cakey in texture, spread with 3 different jams for 3 flavour options- how thoughtful!
13- pizza by my son, honestly it was quite delicious. He’s hired.
