I love adapting recipes and whipping up quick, healthy snacks. Overripe bananas? Turn them into a quick banana oat cookie with a magnesium boost. Great for studying, working out, or a snack break. 🍌
Magnesium can help with energy, muscle function, and sleep. If you’re cramming or training, it might support you. 🙌

Recipe (simple, serves 12)
Ingredients:
2 overripe bananas
2 cups rolled oats
1 egg
1 teaspoon vanilla essence
1/2 teaspoon cinnamon
1 1/2 teaspoon baking powder
50 g dark chocolate, chopped
Pinch of salt

Method:
Preheat oven to 180°C. Line a baking tray.
Mash the bananas, then mix in the egg and vanilla.
Stir in oats, cinnamon and baking powder.
Fold in chopped chocolate.
Scoop onto a tray and flatten slightly.
Bake 10 minutes until edges are golden. Cool a moment before enjoying. 💚

Thanks to the group SWEA Geneva 🇸🇪 for inviting me to introduce them to a cold lake swim. 💙
It was chilly enough to give it a try for their first plunge, and it turned out to be a memorable experience with those lovely ladies. Afterwards, we enjoyed a healthy FIKA— a moment to slow down and appreciate the good things in life.
