A morning out foraging around Brighton at the beginning of September 🍄🌿

The first signs of autumn are starting to appear, with rooting boletes pushing through the ground, chicken of the woods growing on old trees, oyster mushrooms tucked away in the woods, and plenty of wild berries along the way.

September is such an exciting time to be out looking — the seasons overlap, and every walk can turn up something different. A few hours in the woods, a basket of wild food, and a reminder of just how much is growing all around us.

⚠️ A reminder that mushroom foraging requires real care and knowledge. Never eat a wild mushroom unless you are 100% certain of its identification and that it is safe to eat. Do your own research and learn from multiple reliable sources before picking or consuming anything.

Please also forage responsibly and sustainably. Take only what you need, avoid damaging habitats or mycelium, leave plenty behind for wildlife and other foragers, and always check the local rules and land access before picking.

Foraging is about building a relationship with the landscape — not taking everything you find. 🌿

Razor Clam & Foraged Salsa

to 2022 when we made this banger with razor clams we foraged and purged from a clean sustainable source.

A little taste of the coast, with a bit of the hedgerow thrown in.

For this recipe, we steam fresh razor clams in homemade elderflower champagne, just enough to make them open and release their delicate, sweet meat. Once opened, the clams are refreshed, removed from their shells and finely diced before being folded through a bright, punchy salsa made from a mix of larder staples and foraged ingredients.

The chopped razor clam gives the salsa a lovely texture and subtle sweetness, while the foraged ingredients bring acidity, freshness and a bit of wild character.

Once everything is mixed together, the salsa is spooned back into the cleaned razor clam shells and served straight from the shell.

It’s a simple dish, but it brings together two of my favourite things about wild food: what you can find along the coast and what you can make from the landscape around you.

Please only forage Razor Clams if you are in an area where it is allowed and where the water is graded safe to eat, you also need to purge or sterise the molluscs to render them safe to eat.

🥩🍄 THIS MUSHROOM LOOKS LIKE A BLOODY STEAK! 🤯

Meet the Beefsteak Fungus (Fistulina hepatica) — one of the weirdest fungi you can stumble across in the UK.

It grows mainly on oak and sweet chestnut, and when you cut into a fresh specimen it can ooze a red liquid that makes it look like it's actually bleeding! 😳

🔎 Look for:
🍄 Red/brown, fleshy, steak-like growth
🌳 Usually growing from living or dead broadleaf trees
💧 Reddish liquid when cut
🔴 Tiny pores underneath rather than gills

It’s edible when young, but older specimens become tough and woody, and wild mushrooms should NEVER be eaten unless you're 100% confident in the identification.

Nature really does make some bizarre things… 😂

🍇 From hedgerow to dessert…

Elderberries are one of those wild foods that can be easy to overlook — but when they’re ripe, they’re absolutely worth collecting. 🌿

I took a basket of juicy elderberries and turned them into a rich, deep-purple juice… then used it to make a seriously delicious dessert. 💜

There’s something pretty special about taking something growing wild around us and turning it into something this good.

⚠️ Important: elderberries shouldn’t be eaten raw in quantity. Cook them thoroughly before consuming, and make sure you’ve correctly identified the plant.
