Who else feels like they are in the kitchen nonstop since lockdown? Have you also heard I’m hungry or can I have a snack nonstop?
This week I’m hoping to share some quick, easy, nutritious and filling snack ideas with you all. Healthy snacks provide a way for you to recharge, manage your blood sugar levels and sustain energy until the next meal.
We’ve been using leftovers wherever we can, whether it’s with breakfast or with snack time to avoid food waste. The kids can definitely help with these snacks and maybe get their creative juices flowing for the next snack.
Today I’m sharing quick and easy Energy balls/Bliss balls with you.
1/2 cup almonds or walnuts (4tbs)
10-12 large pitted dates
2 tbs shredded/ desiccated coconut
1 tbs raw cacao powder
1/4 tsp vanilla extract
Pinch of salt
2-4 tbs water during blending
In a food processor add all ingredients except for the water, if the mixture is too crumbly after a good mix then add one tablespoon of water at a time to get to perfect stiff mixture. Once combined form into small bite size balls.
Optional to decorate with extra coconut or cacao powder. Store in airtight container in fridge for firmer texture, keep up to 4days if they last that long 😉 or enjoy straight away. We got 15 balls with this mixture. These can be good as an addition to snack time or with a cup of tea in the afternoon or as that sweet craving after a meal.
