Iced Chai with a Saffron-Moonji Vanilla & Black Cardamom Cold Foam 💛
With mood boosting saffron to help bring some internal sunshine on a rainy day!
Ingredients:
For the chai concentrate:
- cup of water
- 2 inches of fresh ginger
- 8 cardamom pods
- pinch of fennel seeds
- 1 tsp cinnamon
- a generous pinch of ground black pepper
- x2 black tea bags
- x2 tsp of maple syrup
For the Moonji cold foam:
- 1 tub of vanilla & black cardamom ice cream
- a generous pinch of saffron threads
Recipe:
For the chai: Grind fresh ginger and cardamom pods in a pestle and mortar. Add to a cup of hot water with cinnamon, fennel seeds, black pepper, and tea bags. Bring to a boil, then leave to cool. Transfer to the fridge to chill.
For the cold foam: Allow your Moonji Vanilla & Black Cardamom ice cream to melt to room temperature. Note: once melted, do not refreeze. Grind a pinch of saffron in a pestle and mortar, then pour a small amount of the warm melted ice cream over it to bloom. Stir back into the rest of the melted ice cream and whisk with an electric whisk until light and foamy.
To assemble: Fill a glass with ice. Pour over your chilled chai. Spoon the saffron cold foam over the top. Serve immediately and enjoy 😍
