💚 Halloumi, Beetroot & Lentil Salad 💚

It’s vegetarian, colourful, full of flavour and super easy to pop into a lunchbox! 🥰

Simply mix:
🥣 Brown or black lentils
💜 Ready-cooked beetroot
🥒 Cucumber
🌿 Fresh coriander
🧅 Spring onions

Then top with 45g reduced-fat halloumi, lightly fried until golden, and finish with a squeeze of fresh lemon 🍋

Perfect for making ahead and taking to work, enjoying at home or packing up for a busy day!
