For the bowl:

- 120–150g salmon fillet

- 1 tsp olive oil

- 1 tsp tamari or soy sauce

- 1 tsp lemon juice

- 1 small sweet potato, cubed

- Β½ cup cooked quinoa or brown rice

- 1 cup spinach or kale

- Β½ cup broccoli florets

- 1 hard-boiled egg (optional)

- ΒΌ avocado, sliced

- 1 tbsp pumpkin seeds + 1 tbsp sesame seeds

- Handful cherry tomatoes

✨ Golden Miso Dressing:

- 1 tbsp white miso paste

- 1 tsp grated ginger

- Β½ tsp turmeric

- 1 tsp honey or maple syrup

- 1 tbsp tahini

- 1 tbsp lemon juice

- 2–3 tbsp warm water

2. Roast sweet potato: Toss in a little oil, bake @ 200Β°C for 20–25 mins until golden

4. Steam greens: Broccoli & spinach for 3–4 mins

5. Make dressing: Whisk all ingredients until smooth and creamy

6. Assemble: Base of quinoa/rice β†’ sweet potato β†’ greens β†’ salmon β†’ avocado β†’ tomatoes β†’ seeds

Eggplant is such an underrated gem β€” soft, creamy when roasted, gentle on digestion, and wonderful for keeping you hydrated and nourished. Paired with protein-rich chickpeas, warm spices, and golden roasted feta β€” it’s comfort food that does your body good πŸ’›

- 1 medium eggplant (aubergine), cubed

- 1 tin chickpeas, drained & rinsed

- 1 red onion, cut into wedges

- 2 tbsp olive oil

- 1 tsp smoked paprika

- Β½ tsp ground cumin

- Β½ tsp garlic powder

- Salt & black pepper to taste

- ✨ MY SPECIAL TOUCH: 100g crumbled feta cheese, sprinkled over before roasting πŸ§€

1. Preheat oven to 200Β°C / 180Β°C fan / Gas 6

2. Toss eggplant, chickpeas and onion with the oil and all the spices until everything is nicely coated

3. Spread onto a baking tray β€” give them space so they roast nicely rather than steam

5. Roast for 25–30 minutes until the eggplant is golden and tender, chickpeas are lovely and crisp, and the feta has turned golden and slightly crispy on top!

- Β½ Zucchini, sliced

- 1 handful Cherry tomatoes

- 1 tbsp Olive oil

- Salt, black pepper & dried oregano

- Handful of Baby spinach or mixed salad leaves

- 30g Feta cheese (or dairy-free alternative)

- 1 tbsp Pumpkin seeds

- 1 tbsp Hummus (for dipping/dressing)

- 1 tsp Lemon juice

- 1 tsp Olive oil

- Pinch of garlic powder
