How do I eat healthy put simply : eat a variety of colors.
Each color in fruits and vegetables comes from different families of beneficial plant compounds called phytonutrients. Deep reds and pinks often signal lycopene. Oranges and yellows, carotenoids. Greens, chlorophyll and folate. Blues and purples, anthocyanins. Each offers different protective benefits.
Eating a wide variety of colorful plant foods is associated with lower inflammation, better gut health, and reduced risk of chronic disease. Greater variety also feeds a more diverse gut microbiome, which supports immunity and overall health.
A plate that includes several different colors is almost certainly delivering a broad range of nutrients, without you needing to count or calculate anything. That doesn’t include smarties! 🙄
Beige, processed food tends to be nutrient-poor. Vibrant, varied, whole plant food tends to be nutrient-rich. Your eyes can guide you.
