This stewed apple recipe is based on Ayurvedic principals. Not only is it highly nutritious and an ideal breakfast dish, but the fiber, pectin, found in the apple skins may help to maintain and repair the intestinal mucosa lining in the gut. Gluten Free Grød Recipe and Nisse the Nordic porridge guardian!

In Nordic folklore, the Nisse is a household spirit or protective farm help. To keep the Nisse content — and the household protected — a bowl of porridge (grød) was traditionally left out, especially at Christmas. If the porridge was forgotten, or prepared carelessly, the nisse might cause trouble and mischief; if it was made properly, harmony was maintained.

Inspired by this tale I am sharing a grød recipe using gluten-free grains and a balanced macronutrient composition, including protein and healthy fats, to support satiety and blood sugar regulation. The result is a warm, easily digestible meal that provides sustained energy - don't forget to leave some out the Nisse!
