🥓🫖Smoky Pigs In Blankets Recipe - Tea Infused🫖🥓

Lapsang Tea Infused Smoky Pigs In Blankets Recipe

🛒Ingredients
2 medium carrots (about 100g), cut into thick slices
2 small parsnips (about 80g), peeled, woody cores removed and cut into chunks
1 red onion cut into wedges
2 tsp olive oil
16 chipolata-sized pigs in blankets or 8 larger ones
100 ml of Lapsang tea(1 teaspoon loose tea infused in 200ml hot water for 8 minutes)
2-3 tbsp cream or crème fraîche(optional)
2 tbsp chopped soft herbs such as basil or parsley
mashed potato or leftover roasties (see tip), to serve

👩‍🍳Method
Step 1
Heat the oven to 220C/200C fan/gas 7. Put the carrots, parsnips and onion in a deep baking dish or casserole, and toss in the oil. Season well and roast for 20 mins. Add the pigs in blankets and roast for a further 10-15 mins or until the bacon begins to crisp a little.
Step 2
Reduce the oven to 200C/180C fan/gas 6. Add the tea to the baking dish. Cook for another 40 mins. Taste and adjust the seasoning if needed. Swirl through the cream, if using, and scatter over the chopped herbs. Serve with mashed potatoes or leftover roasties.

🌿Top Tips:
LEFTOVER COOKED PIGS IN BLANKETS?
If you've already cooked the pigs in blankets, add them with the tea, instead of earlier.

🌿LEFTOVER ROASTIES?
To serve with leftover roast potatoes, put them on a baking tray and lightly crush with the back of a fork so they split. Heat in the oven alongside the casserole for 40 mins.

🧃🫖🧊Why cold brew tea?🧊🫖🧃

Well this is an alternative method to making iced tea in the traditional way (which involves brewing the tea with hot water then pouring over ice to cool); the benefits of cold brew tea is as the leaves are gently steeped in water for a long period of time, there are less tannins released, lower caffeine levels and there can be increased antioxidant levels if left to steep for 12 hours or more.

🤔How is the tea flavour affected?
When extracting flavour from tea leaves using a cold brew method, you're using the length of time the leaves are infusing in the water to do the extraction rather than the chemical reactions that occur when infusing with hot water. This cold infusion (or brew) technique means the flavour of the tea will be a lot smoother, less astringent and you will taste different nuances to the tea you don't taste with a traditional hot infusion. In particular, if the tea you use is more of an aromatic tea, like Sugar and Spice Tea or Zesty Earl you will taste much sweeter and have more of the floral and citrus refreshing notes from the tea.

🫖What equipment do you need?
As a very simple method, the only equipment you need is a water filter (or filtered water), a fridge and a tea pot or container you can fit inside your fridge for the leaves to infuse. Once the leaves are infused, you will need another container like a glass pitcher to pour the infused tea to serve and be able to store inside your fridge again if needed.

👩‍🍳How to make
As with any tea, water quality is just as important as the tea leaves you are using, so only make using fresh filtered water (not distilled). Make sure the water is cool, use ice cubes if necessary, but the water temperature should be around 8 - 12 degrees C if possible. For the tea, you are going to use around double the amount of tea you would normally use to make a hot tea and the chart below provide you with a guide as to how much to weigh per 100 ml.
Weigh the leaves, according to the volume of water you intend to infuse, and place them inside your teapot or container. Gently pour the filtered water over the tea leaves. Avoid stirring. Cover and then refrigerate. After a few hours,( see the chart below for some guidance) remove the tea from the fridge and taste. If the flavour is not strong enough for your taste, place back in the fridge for further infusion time. If all well, decant the tea (separating the tea from the tea leaves) into your glass serving pitcher and serve.

🌿Any teas made this way can be stored up to 24 hours in an airtight container in the fridge.

🍊🥧Marmalade & Earl Grey Frangipane Tart Recipe - Tea Infused🥧🍊

Gorgeously fruity and sweet tart! Perfect as an afternoon treat!

🛒Ingredients
300g plain flour, plus extra for dusting
½ tsp fine sea salt
3 tbsp icing sugar
170g cold unsalted butter, cut into cubes
2 egg yolks (freeze the whites for another recipe)
200g marmalade (thick-cut marmalade works particularly well)
a handful of flaked almonds
icing sugar, to dust
extra-thick cream, to serve

🛒For the frangipane
150g unsalted butter, softened
150g golden caster sugar
2 earl grey tea bags
¼ heaped tsp sea salt
80g ground almonds
3 eggs, beaten
3 tbsp self-raising flour
a handful of flaked almonds
icing sugar, to dust
extra thick cream, to serve

👩‍🍳Method
STEP 1
For the pastry, combine the plain flour, fine sea salt, icing sugar and cold butter in a food processor, then pulse to fine breadcrumbs. Or rub the butter into the flour using your fingers. In a small bowl, mix 3 tbsp cold water with the egg yolks, add to the mix and pulse or stir in to combine – add up to another 2 tbsp water if the mixture still feels dry. Tip into a bowl, shape into a ball, then cover and chill for 30 mins.

STEP 2
On a lightly floured surface, roll out the pastry to a 27cm circle about the thickness of a £1 coin. Run a palette knife underneath it every now and then so that it doesn’t stick. Use a lined 23cm fluted tart tin, leaving an overhang of about 1 cm and freeze for 20 mins. Heat the oven to 200C/180C fan/gas 6.

STEP 3
Cover the pastry with baking parchment, fill with baking beans or uncooked rice and bake for 15 mins. Remove the parchment and beans, prick the base of the tart with a fork and bake for 7-10 mins until the pastry has turned slightly darker. Trim the overhang with a serrated knife.

STEP 4
For the frangipane, beat the softened butter and sugar with a whisk (electric or by hand) until combined but not aerated. Cut the tops off the teabags and tip the tea leaves into the butter and sugar mix along with the sea salt, ground almonds, beaten eggs and self-raising flour and beat for another minute until the mixture just comes together.

STEP 5
Spread the marmalade over the pastry using a spoon. Top with the frangipane, working from the centre and leaving a 5mm gap around the edge for it to expand. Be gentle and try not to mix the frangipane with the marmalade for a defined layer when you cut it. Scatter over the flaked almonds and bake for 40 mins or until golden (cover with foil after 30 mins if it’s colouring too quickly). Leave to cool in the tin, then dust with icing sugar.

🌿Will keep for up to three days. Cut into slices and serve with extra-thick cream.

🛒Ingredients: High-Grown Kenyan & 2nd Flush Assam Black Tea.
Leaves: CTC Broken Orange Pekoe (BOP)/BP1 Broken Pekoe #1.

🍯Honey & Rooibos Tea Loaves🍯

Makes 4 mini loaves

🛒Ingredients
350g chopped dried figs
150ml Rooibos tea (infused tea with leaves removed)
450 g honey (divided - 80g plus 100ml of infused rooibos tea)
115g unsalted butter
70g caster sugar
3 large eggs
625g self raising flour
2 teaspoons (10 g) baking powder
½ teaspoon kosher salt
150ml whole milk
150 g icing sugar, sifted
175 g sliced dried Figs

👩‍🍳Method
In a medium saucepan, heat chopped figs, (115 g) honey, and 50ml rooibos infused tea(no leaves) over medium heat until mixture begins to simmer. Remove from heat. Let stand until cool, about 30 minutes.
Preheat oven to 350°F (180°C). Butter and flour 4 (4½x2½-inch) mini loaf pans.
In the bowl of a stand mixer fitted with the paddle attachment, beat butter and caster sugar at medium speed for 5 to 10 seconds. With mixer running, slowly add remaining honey, beating until combined. Add eggs, one at a time, beating just until combined after each addition.
In a large bowl, whisk together flour, baking powder, and salt. With mixer on low speed, gradually add flour mixture to butter mixture alternately with the 100ml milk and 50ml of the tea, beginning and ending with flour mixture, beating just until combined after each addition. Spoon half of batter into prepared pans; top with fig mixture. Spoon remaining batter over fig mixture.
Bake until golden brown and a wooden pick inserted in center comes out clean, about 35 minutes. Let cool in pans for 10 minutes. Run a knife around edges of loaves to loosen. Remove from pans, and let cool completely on a wire rack.
In a medium bowl, whisk together icing sugar and remaining 50ml milk until smooth. Drizzle glaze over loaves (add more milk a tiny bit at a time if not quite runny enough).
In a small bowl, place sliced figs. In a small saucepan, heat remaining 50ml tea and 2 tbs honey over medium heat until hot. Pour hot tea over sliced figs. Cover and let cool. Garnish cakes with figs, if desired. Wrap and freeze loaves for up to 2 weeks.
