Mix veggie and paneer cutlet

Ingredients

Paneer
Vegetables – boiled potato, french beans, corn, bell peppers, onion, carrot
Bread crumbs
Spices like salt, garam masala, green chillies
Ginger and garlic

Recipe - take small amount of paneer, one large boiled potato, chopped french beans, chopped capsicum or any bell pepper you have at home, corn, chopped onion, grated carrot and to that small amount bread crumbs (whole wheat bread crumbs for binding). All the veggies are raw and finely chopped. To this add spices and herbs - ginger, green chillies, salt, garam masala, garlic if you want. Makes about 6-7 cutlets. Mix all the ingredients and make small round portions. Flatten them steering your palms and roll them in some semolina or rawa and shallow fry with minima oil on a non-stick pan. You can use the same stuffing as a filling for a Paratha or for a stuffed toasted sandwich.

Brown rice cutlets can be made with left over brown rice, grated carrot and capsicum, salt, ginger chilly paste and baked on the pan with minimal oil. Alternately , you can use normal white rice.
