Modern nutrition praises sprouted grains for their increased vitamin content and improved nutrient availability. But Ayurveda looks beyond nutrients—it asks one important question:

According to Ayurveda, sprouting changes the qualities of grains and legumes. While they may become lighter in some ways, they can also become more Vata-provoking due to increased dryness (Ruksha), mobility (Chala), and subtle cooling (Sheeta) qualities.
