🌿 What is your favorite way to eat more veggies? 🌿
Lately, I have been obsessed with the Rainbow Bowl, made by . The fact that I have ordered this bowl TWICE this month, is an absolute miracle (that is more in one month than I've done in my entire life 😂). But seriously though, their food is something else!
My bankaccount disagrees with me though 😭 So, in order to save me a bit of money (only a little, because, can't lie, I will still be ordering this hahaha) I made my own version! Quite different in the end, but still very delicious!

What is your top tip to save $€£ on food?
We've been actively trying to spend less money on food lately and chilli has been on the menu quite regularly. Not necessarily because it is the only way to eat cheap, but mostly because it is soooo easy and quick to make! And because it's cheap 😂
I think it's safe to say we're big fans of the chili bags from (I shared these in an earlier post on how to save money), so I can really recommend them!
Other easy ways we save money on is to plan our meals, shop in advance, and actually make what we planned (our biggest issue hahah) instead of running to the shops daily to get whatever we feel like at that point. It may seem like it doesn't make that mich of a difference, but by just doing that we've cut our grocery bill by a third 😬
And the more we save on our 'typical' grocery bills, the more we get to spend on ordering food 😂 (I am particularly obsessed with the rainbow bowls from - I don't know how I've become the person to crave things with vegetables, but here we are 🤷🏼‍♀️)

Let me check in on you guys! How is your week going? 🤗
Last week was definitely not my week to say the least, so I've beent aking time to work on that. But a few amazing things happened in the meantime!
First of all, it was my 24th birthday last week, which was lovely despite the ungoing restrictions.
Second, look at this amazing doodle .arts made out of my logo! What do you guys think?! 😍
Lastly, I also have a few really amazing collabs that are coming, some here online, some offline.. Can you guess what it will be? 😏

Spaghetti with Peaballs 😎
Swipe to see the AWESOME texture! And save if you'd like to try it out later 😏
These were a huuuuuge hit, so we'll definitely eat this more often! Here goes the recipe:
INGREDIENTS
400gr vegan mince (I used )
700gr passata
1 zucchini
3 bell peppers
250gr champignons
1 leek + 5 garlic cloves
15 gr fresh basil
500gr spaghetti
SPICES
1 tbsp paprika powder
1 tbsp mince spice mix
1 tbsp garlic powder
1/2 tsp five spice
1/2 tsp black pepper
DIRECTIONS
1. Mix the spices in with the mince and form it into balls. Let this sit for at least 30 minutes.
2. Finely chop the leek and garlic and sear them in a pan with some olive oil. Cut all the other veggies and add them to the pan as well.
3. Fill a large pan with water and bring it to a boil. Cook the pasta according to the package instructions.
4. Add the passata to the vegetables and turn the heat down to medium-low.
5. Sear the peaballs in a pan with some olive oil until goldenbrown.
6. Once the pasta is cooked, drain the water, add a bit of olive oil and stir well. When the peaballs are done as well, stir them through the sauce.
7. Time to eat! Put some spaghetti on your plate, pour over some (or a lot of) sauce, making sure you get lots of balls 😝 and finish it off with some extra fresh basil if you like. Enjoy!

🌿 TOP 3 food growing & recycling tips for in your apartment 🌿
We live in a relatively small apartment with very little window space (we only have 4 small windows w direct sunlight in the entire apartment 🤪) and a pretty decent-sized (6m2) but covered balcony. I thought it would be pretty impossible to grow anything here because we don't get that many sun hours on this side of the building.
But I decided to be stubborn and try it anyway 😎 so far, I've been growing basil, strawberries, parsley, mint, spinach and stringbeans. On top of that, we have a project run by our national supermarket ( ) to promote gardening, so I have 16 more seedlings from that project 😱 (what I'll do with them if it works and they continue to grow? You tell me, I have no clue 😂).
These 3 tips have helped me to actually grow and not kill plants 🙈:
1. DO NOT, I repeat, DO NOT buy those dirt/earthbags from the supermarket. The quality is usually low and it tends to be contaminated (I read this) with diseases. As soon as I stopped using those, my plants stopped dying 😬
2. Make your own fertilizer/compost. Again, we have a small apartment and I'm not going to live in stench, but Bokashi Buckets are perfect for us (so far)! All of our food waste goes in there and you can use the juice that comes out of the bucket as a drain-cleaning fluid or as a fertilizer (when mixed w water). The rest you can use to make compost with to give extra nutrients to your plants (once every few months usually). Leftovers? Maybe you have some friends/family with gardens or you can ask if another local may be able to make use of it (if you're in the NL: mensen met moestuintjes of de kinderboerderij bijv 🤗)
3. All plants have different needs. I made a schedule with all plants we have, how much water & sunlight they need, etc. I put this is my calender so I no longer have to think about it and just do what my phone says 😂 after a while I got the hang of it and now I know it by heart 😙
Buttt in the end, I'm also still learning, so I'm always open to new knowledge and suggestions ❤

Sweet Potato Brownies 😱 What is your fav sweet dish? 😏
Wait what?! How do a potato and brownies go together?! I know, it sounds horrible (it really does), but it is very good, I promise!
I made this healthy brownie version for a colleague who is allergic to E-numbers and can't handle certain types of sugar, so this was the perfect deal for her! I brought the leftovers home and well... they were gone pretty fast 😬
(Especially if you heat them up in the microwave for 30 seconds, they become extra delicious!)

I made carrot cake tofay to celebrate graduating from my Master of Science today (swipe to see) 🥳
Although I graduated last August, the ceremony was today, via Zoom. Not quite what I had hoped, but it was lovely nonetheless 🤗
It was my first time making a carrot cake so I was a bit scared it would fail, but it was actually really good! And the sponginess was insane 😳
It is part of the Baking theme for that I'm doing with this month. Definitely ceck her out for more awesome vegan bakes!
The recipe:
FOR THE CAKE
1 cup soy milk + 2 tbsp vinegar
3 grated carrots
1/3 cup maple syrup
1/3 cup (coconut) sugar
2 tbsp olive oil
1 tsp vanilla extract
190gr flour
1 tsp baking powder
1/2 tsp cinnamon
1/4 cup chopped walnuts
Pinch baking soda & salt
FOR THE FROSTING
1 1/2 cup cashews
3 tbsp coconut cream
1/3 cup maple syrup
1 1/2 tbsp coconut oil
1 tsp lemon juice
1 tsp vanilla extract
Soak the cashew nuts in hot water for at least 1 hour. Preheat the oven to 180C/350F. To a large bowl, add the soy milk and vinegar. Let this sit while you grate the carrots (by waiting, it will curdle, so you're making buttermilk!)
Add the grated carrots to the bowl along with all the wet ingredients. Gently stir. Add all the other ingredients for the cake as well. Mix gently, don't overmix! Chop the walnuts and mix them in as well.
Line a loaf-tin with parchment paper and gently pour in the mixture. Spread it out evenly and tap to get rid of air bubbels. Put it in the oven for 30 mins.
Meanwhile, make the frosting by adding the soaked cashews along with all other ingredients to a foodprocessor. Blend until smooth and put it in the fridge for at least 1 hour (or about 20-25 mins in the freezer).
Once the cake is done, let it cool COMPLETELY before adding the frosting and some extra chopped nuts if desired. Enjoy!

Tight on your foodbudget? Or you spent a liiiiitle too much on take-out, leaving you with only a few euros for the rest of the week? AND you have a Lidl nearby?
Then this is one for you! (And me 🤷🏼‍♀️) Lidl sells these bags for only 1.79 each!! Combined with some rice (or potatoes?) they can easily be stretched to 4-6 meals, add some wraps and you could even stretch them to about 8 portions! The sauces are really tasty, it has a very short ingredientlist (yay!) and they are filled w veggies and beans 🙌
They have definitely become a staple here, and we always have some of these in the cupboard for an easy meal 🌿 Which one will you try first?

I am notorious for killing plants. Not even kidding, it is actually very embarrassing 😂
Butttt I was so embarrassed that I decided to change it. So I put a lot of hours into learning more about taking care of plants and IT IS PAYING OFF! (Much of my self-learning time went into vigurously watching 's stories, can't lie 🙈)
I now have so many happy plants 😱 I can't believe that I'm getting good at this 😂 What is your nr 1 plant tip? Or are you a plant killer like I am (or was?)?

SO, it is time for a birthday and you have to make a cake. But then there is this veeegan colleague that you want to accomodate...Or you áre the vegan colleague (💁🏼‍♀️) that would like to celebrate without babies losing their mothers or other babies being ground up alive for this special occasion... HOW ON EARTH ARE YOU GOING TO DO THAT?! 🤪
Lucky for you (and me) it is actually super easy! 🥳 Lots of ingredients can be easily swapped and can be found in any supermarket! I made this verrry yummy chocolate cake for my colleagues and well... it didn't disappoint (even though I am far from a baking princess, it has been almkst a year since I made my last cake 🙈). They all asked for the recipe! So here it goes 😏

I really like the pulled oats to add more meaty textures to a dish. In a previous post I already used these to make a warm sweet potato salad, jerusalem artichoke toast, and stuffed peppers. Now it is time for a good burrito! Which is your fav? 🥳
