Our home in Portugal is 30 hectares of some of the most beautiful and empty land in Europe. We live with a herd of 9 horses, and are guided by nature in how we care for them, ourselves, our land. We live 'over the edge' always expanding our horizons, outgrowing ourselves and our ideas on a daily basis, exploring, listening, living fully. But we are also practical people, with practical skills and

Good food is an integral part of the Over the Edge experience. We are blessed in that all of us are handy with a spatula, each with his/her own special twist.

A little known fact about Nayana though is that she was once a cook in a very eclectic vegetarian restaurant. She is the least frequent cook these days, but once in a while she makes a guest appearance. This time it was brie burgers, something she learned in her restaurant days but hasn’t cooked for 40 years because we have never found quite the right ingredients.

We still haven’t but we gave it a go anyway. Amazingly, though she might sometimes forget what she did last week, she still remembers the recipe.

It was a whole crew operation with fresh baked buns and oven roasted chips and many hands putting the burgers together. Doesn’t it look yummy? 🤩

Meet our green lavender. 🌿

You have probably never come across this one before, most people haven't. Lavandula viridis is a rare subspecies of lavender found only in parts of Portugal and Spain, and we are lucky enough to have it growing all over our northern slopes, tucked under the trees in the cooler, shadier spots where it absolutely thrives.

It smells nothing like the lavender you find in shops. It is sharper, greener, more alive, the kind of scent that opens your lungs and makes you take a proper deep breath without even thinking about it.

And it is seriously good medicine. We have been using it here on the farm for years, for fungal infections, for respiratory bugs, for that general feeling of something coming on that you want to nip in the bud. It's perfect for those who are tired from giving too much. It has a quiet, grounding energy that seems to say: you are fine, keep going.

We distil both the essential oil and the hydrosol right here on the farm from plants we harvest ourselves. It does not get much fresher than that.

Have you met helichrysum yet?

Also known as immortelle, this one has a beautifully complex, honey-sweet, musty fragrance, and it is one of our most loved products on the farm.

We use it for bruising, traumatic injury, itching and irritation. As a facial toner, it helps to reduce thread veins and blemishes.

And emotionally, this is the bit we really love, it gently works on those deeply bruised places that have built up a hard shell over time, helping your heart to open and trust again.

Our helichrysum hydrosol is distilled right here on the farm, slowly and gently, using pure spring water from our own land, land that has had no chemical fertiliser on it in decades. Unlike most commercially available hydrosols, ours is not a by-product of essential oil distillation. It is our primary product.

That means every bottle carries the full energetic imprint of the whole plant.

And the ways to use it?

After shower rinse, facial toner, bath soak, room spray, soap making, in creams, and honestly, get creative with it.
