Month 7 has been focused on Extended Fasting, something I started month 6 after falling in the shower and hurting my arm. I have to take 6 weeks off of lifting, which was a blessing in disguise, because adding the extended fasting into my diet has been the final piece of the puzzle. Dual fuel now running how it is supposed to. Gut healed. I can't wait to be riding rollercoasters with Jonesy in July, jogging a mile with him August 1st, and working on the 300 lb Bench challenge for July 1st until then!

I'm going to secretly join Jonesy on his 1 mile challenge. At 350lbs, this won't be easy, but he is worth it. I want to jog 1 mile, non-stop with him on August 1st.

Jonesy is working hard on that 1 mile challenge. His brother is going to enlist in either the Air Force or Navy this summer and is going to be in charge of his 1 mile training. I'll be training for the mile without Jonesy knowing so that I can jog it with him in August. Currently at 350lbs, my body hurts to jog, but as I continue to lose weight, it should get easier.

This phase was a critical test of intentionality and discipline, and the results are finally here. But the weight loss numbers are only half the story.

My son, Jonesy, issued the ultimate culinary challenge after discovering my weakness for PB&J sandwiches on our Plant-Based month! He and MaeMae staged an intervention, taking me to Austin favorites like the Bouldin Cafe and The Nom to show me how delicious plant based eating can be.

The Gauntlet: I have 30 minutes to cook three dishes:

MaeMae (Keto/High Protein): Needs low-carb elements and satisfying healthy fats.

Big Pop Pop (Plant-Based): Needs a meat-free, high-fiber, clean-carb component.

The Boys (Hidden Veggie): Requires clean ingredients and disguised vegetables.

Special ingredients: Kiwi, Sweet Potatoes and Heart of Palms Palmini Rice.
