Banana Apple Muffins — but make them wellness girl approved ✨
Makes 6 medium muffins
Ingredients
* 1 large ripe banana, mashed
* ½ small apple, grated
* 1 egg
* ¼ cup plain Greek yogurt
* 1 tbsp olive oil or melted coconut oil
* ½ tsp vanilla extract
* ¾ cup oat flour
* ½ tsp baking powder
* ¼ tsp baking soda
* ½ tsp cinnamon
* ⅛ tsp nutmeg
* Pinch of salt
* 1 tbsp chia seeds
* 2 tbsp chopped walnuts
* 1 tbsp maple syrup, optional

Preheat oven to 350°F and lightly grease a 6-cup muffin tin. In a bowl, mash the banana. Add the egg, Greek yogurt, oil, vanilla, and maple syrup. Mix well and stir in the grated apple.
Add oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix until just combined—don’t overmix.
Fold in the chia seeds and chopped walnuts.
Divide the batter evenly between 6 muffin cups, filling each about ¾ full
