Living Whole Food Plant Based Went WFPBNO 2/2016 & we never looked back. We’ve lost over 200lbs & are off all our meds. Let me tell you what... IT WORKED!! We didn't track anything.

We are a family of 3, living in Montana, changing our lives and our health for the better by learning to live Whole Foods Plant-based. This page is a collection of information we have found as we journey along our WFPB lifestyle along with bits and pieces of our own personal journey. We started our WFPB journey in February of 2016 after watching Forks Over Knives to see if we could get the Hubster

off his blood pressure and cholesterol medicines, not even thinking about the weight loss really but of course we both needed to drop some serious weight also. Most of all we wanted to see if we could change my Husbands chronic illness direction. So far we have lost together over 200 lbs and a bunch of medicines (we are both off ALL our medicines in fact) in the process. Mom and Dad are the ones doing the losing and the teenage son is along for the ride, happily maintaining, enjoying the yummy food and all the benefits he gets along with us. He now has a very bright health future ahead of him. We didn't count anything. We didn't portion anything. Simply put we eat as whole a plant food as we can. We don't drink our meals. We learned the difference between good carbs and bad carbs. Embraced the potato. Dropped the oil and of course any animal products of any kind. Lastly we keep the processed food to a minimum and became obsessive label readers lol. Learn what your ingredients actually are. If you cant pronounce it or you do not know what it is, it put it back. Learn to cook. It's now going to be a part of your life. You can fight it and fail or embrace it and succeed. The choice is yours =0]

We are so excited for our future and to see where this lifestyle is going to take us. So far, besides all the health benefits, we this lifestyle has seen to get us naturally into gardening and who knows whats next! LOL

Meal prep done for a couple days. I finished up the salad I posted about yesterday. So good!!

Mediterranean Bulgur Salad (doubled)

I replaced the oil with vinegar since I used truelemon for the lemon that gave me my liquids. I also replaced the chickpeas with butter beans and I just rinse them super well so that helped with leaving the oil out. I used maple syrup for the sugar and left the salt out because my beans are not no sodium. Super easy and you dont have to heat the house up to make the bulgur!

The second isnt really a recipe its just "toss it in there" potato salad. Last night after the inside of the house hit 85 plus I went ahead and steamed potatoes because hot is hot so might as well go with it. Then I finished it up today. Normally I like to make it with warm potatoes but I didn't have it in me last night to deal with it so today it is lol. Homemade sour cream, some almond milk to thin it out a bit, Mrs. Dash Chicken Seasoning blend, dried dill, dried parsley, 4 cloves of fresh garlic, bell peppers, white sweet onions, carrots, celery and of course the taters. I wanted to put in some Zesty Bread & Butter pickles but I got lazy and didn't want to deal with the mess. So last thing to go in was some brown spicy mustard. I tossed it all together and let it sit about 30 mins. Tossed again and then into individual containers it went with a little bit left over for lunch.

I also roasted sweet potatoes last night when it got hot so that I could make something out of them this up coming week.

When we went WFPB a whole new world of food opened up to us. Looking back on our old way of eating it is some times still surprising how few different kinds of food we used to eat, even though it I thought we were "adventurous" eaters back then lol. I had no idea about wheat berries or sumac spices or brownies made of beans tasting like "regular" brownies. How many types of rice and beans out there was just shocking. There was more spices than Mrs. Dash? Who knew! LOL And that yes.. I could actually make "insert recipe here" all by myself and not need a package to make it taste good.

Anyways long way of saying that one of those discoveries was bulgar. I found this when trying to find a work around to every darn recipe using quinoa ( not my favorite grain ). Yes *gasp* its minimally processed but its still a whole grain. Everyone is always talking about "how much time it takes to cook everything" so not sure why this option is not used more. Little boiling water, a few mins of time and p**f ready to go.

That was a long intro into what I am making for dinner tonight lol

Supposed to be 100 to 101 here today so think this will be a perfect "practically no cook" option for dinner. I impulse bought an electric kettle and have been pleasantly surprised with how often we actually use it lol So it will work perfect for cooking the bulgur without heating the house up.

Anyone else like chunky hummus? Ya me too. I like the mix of creamy beans mixed with more chunky beans and chunks of roasted red pepper and roasted garlic and ya.. yum. Ready for dinner later. Going to just use napa cabbage leaves as the "wrap" and then fill it with hummus, bell peppers, zucchini, cucumbers, white sweet onions, and carrots. Can't wait.

Here are my changes to the recipe

chickpeas - I used chickpeas and great northern (makes it creamier)
tahini - I added about a tablespoon of roasted sesame seeds instead
roasted red peppers
garlic - I did 2 large raw cloves and I did 6 medium/large roasted garlic
kosher salt - left this out because my canned beans are not no sodium
lemon juice - I used 2 packets of true lemon
extra virgin olive oil - I just didn't rinse the can of chickpeas instead

Up tonight for dinner will be Roasted Red Pepper and Garlic Hummus Veggies cabbage wraps. Quick. Easy. And I get to use up some garlic and roasted red peppers that are in need of being used up asap. Veggies are going to just be whatever is in the refrigerator, zucchini, carrots, onions, etc... and yup thats going to be dinner.

Here is the base hummus recipe I am going to use https://stripedspatula.com/roasted-red-pepper-hummus/ I will be leaving the tahini out because I dont have any on hand right now and also leaving the oil out. I will be using canned chickpeas and instead of oil I will just not rinse one of the cans of chickpeas ( I am doubling this recipe so we can eat it over the weekend too ).

Ok I confess that this morning this was going to be turned into Summer rolls and obviously that is not what happened because you see this mornings energy at a much cooler less humid temperature did not take into account the afternoons energy at the much higher temperature and humidity soooo the miss communication between the 2 resorted in a salad lol Cuz.. its hot.. I hate the heat. Anyways turned out delish just not as planned lol

Ingredient changes:

Cashews - I left this out
Sesame Seeds
Red Cabbage - I just used napa and green
Napa Cabbage or Green Cabbage
Quinoa - replaced with chickpeas and soy sauce tofu
Carrots
Fresh Cilantro - this is a hard no for me
Green Onions - used white sweet onion

I also added cucumber,Daikon radish and mangos.

Sesame Ginger Dressing

Rice Vinegar
Maple Syrup
Soy Sauce, or Tamari or Aminos - I used coconut aminos
Fresh Ginger
Garlic
Extra Virgin Olive Oil - I left this out and just didn't rinse my chickpeas
Sesame Oil, light or dark - left this out
Salt
Black Pepper

Ok so the plan for dinner tonight is Asian Slaw Recipe with Sesame Ginger Dressing but I want to take it a step further by adding air fried soy sauce tofu ( basically you dunk your pieces of tofu into soy sauce then bake/air fry them) and wrapping it all up to make Summer Rolls out of it. Oh and I have mango to put in there too.

Here is the base recipe I am using Asian Slaw Recipe with Sesame Ginger Dressing - https://thekitchengirl.com/asian-quinoa-slaw-salad-sesame-ginger-vinaigrette/ - I will leave the oil out. Replace the sesame oil with more sesame seeds if more of that flavor is needed. Not sure if I will need a dip for this or not if I do I will just make a quick peanut butter sauce to go with it.

Ok first off I have to put out there that for some reason facebook is hiding comments on some of the posts. Anywhoo dinner of Greek Bean Salad with Marinated Beans was delish!! I took the salad part that I made earlier and added in my homemade feta, fresh tomatoes and cucumbers. We ate it in some napa cabbage leaves and that was fun too. No need to do that of course as its fine on its own but I was using mine up so ya there was that.

Changes I made

extra virgin olive oil - left this out use didnt rinse the beans super well along with a splash of whilte balsamic vinegar
lemon juice or more to taste
lemon zest
mustard Dijon or yellow - I used brown spicy mustard
honey or maple syrup - i left this out no reason
dried oregano - I left this out and used the sauce from my feta
salt start light and adjust after mixing - i left this out
black pepper - i left this out
butter beans or cannellini beans - i used 2 butter 1 cannellini
cucumber
cherry tomatoes - used roma
green bell pepper - used roasted red pepper
red onion - used white sweet onion
olives

I added 2 cloves of raw garlic and 6 cloves of pickled garlic. I also added sweet banana peppers and some artichoke hearts. Was yum! Super refreshing on a day as hot as today too. Will be nice as leftovers also.

Ok I had to just eyebrow lift on this one just a little bit because the website is called "The Plant Based School" but this recipe has feta (real) feta cheese in it. I feel sorry for newbies when I run across stuff like this because it must be very confusing but anyways... I digress...

This is the salad I am making for dinner tonight. https://theplantbasedschool.com/greek-bean-salad/ No I will not be using real feta I have some homemade tofu feta already to go. I will be replacing the oil (if it needs it) with just a little of the aquafaba from the beans. But honestly you rarely have to replace with ever so just leave it out and pretend its not there and add a bit more of the other seasonings and p**f oil free. Also "marinated beans" gave me a chuckle because you basically put the beans in the dressing while you cut the 4 other ingredients and apparently that is all the time it takes to marinate beans lol so chop slowly...

Ok off to melt/survive through another, I have move to hell, temperature day here in Montana right after I go make up this salad, short the feta and the tomatoes, so the beans can actually marinate... longer lol and then sit in front of my fan and dream of winter...

Vegan Chicken Salad - OK this is the best photo your going to get today. Its 103 degrees and I dont have AC so I am cranky and just want to go sit in front of the fan till I die. UGH. Anyways LOL this turned out delish! We will have it later for dinner as lettuce wraps. I basically changed the whole recipe though because I am working with what I have in the house soooo here is how it went...

Original - My Changes

jackfruit
celery - I used carrots
red onion - I used white sweet onion
dill pickle - I used bread and butter pickles
fresh dill - I used dried along with dried parsley
vegan mayonnaise - I used my homemade sour cream link below
spicy mustard
lemon juice
salt and freshly ground pepper - I used Mrs. Dash Chicken Blend

I added in pickled garlic, red bell peppers and some mild banana peppers I needed to use up.

Super easy and is a nice change up from making a recipe like this that usually calls for chickpeas. I am letting mine sit a couple hours before we eat it and I would recommend that because the jackfruit needs time to soak up all the flavors. I am not suer why she says to serve it with in 4 hours but then says it can keep for up to 3 days *shrug* or 5 days depending on where you read it in the recipe. Anyone else think that about 98% of the stuff out there is AI written half the time anymore? Its annoying. Like it has you set the veggies and herbs aside, prepare the already preapred? Jackfruit into a bowl then add the other ingredients. Why would you do this? I mean either one or the other was already in a bowl wouldnt you just keep adding to it?? Side rant .. anyways... Just make it your way and use the idea for inspiartion.

No cooking this week. Nope none. There will be food. Lots of food and all meals will be covered but I am not cooking. We are breaking heat records right and left around here and after a weekend of that headed into a week of more of it I just cant... nope. Sooooo I found a whole folder of recipes to try this week that do not require cooking. Yes please. Up first for tonights dinner is "Chicken" Salad. Not sure why we have to always use "old" names to describe things but anyways its really a Jackfruit Salad with the flavors of Chicken Salad. ANYWAYS I have a bunch of cans of jackfruit that have been screaming my name to be used so thats what is up today!
