Meal prep done for a couple days. I finished up the salad I posted about yesterday. So good!!
Mediterranean Bulgur Salad (doubled)

I replaced the oil with vinegar since I used truelemon for the lemon that gave me my liquids. I also replaced the chickpeas with butter beans and I just rinse them super well so that helped with leaving the oil out. I used maple syrup for the sugar and left the salt out because my beans are not no sodium. Super easy and you dont have to heat the house up to make the bulgur!
The second isnt really a recipe its just "toss it in there" potato salad. Last night after the inside of the house hit 85 plus I went ahead and steamed potatoes because hot is hot so might as well go with it. Then I finished it up today. Normally I like to make it with warm potatoes but I didn't have it in me last night to deal with it so today it is lol. Homemade sour cream, some almond milk to thin it out a bit, Mrs. Dash Chicken Seasoning blend, dried dill, dried parsley, 4 cloves of fresh garlic, bell peppers, white sweet onions, carrots, celery and of course the taters. I wanted to put in some Zesty Bread & Butter pickles but I got lazy and didn't want to deal with the mess. So last thing to go in was some brown spicy mustard. I tossed it all together and let it sit about 30 mins. Tossed again and then into individual containers it went with a little bit left over for lunch.

I also roasted sweet potatoes last night when it got hot so that I could make something out of them this up coming week.
