Quick Update!
A large part of Radici will be fresh pasta! My current plan is to grind our own flour to make fresh pasta! No additives, preservatives, bromates, or bleach. Just quality, flavor, and love! Ideally it'll be dried and shippable if you're not local! Much going on! More to come!

Dream big! I've never had the ability to dream as big as I am now! This project has evolved to something I thought maybe in a few years...but the fact that I'm looking at equipment for a full commercial kitchen is blowing my mind!

Also side note: the pricing on kitchen equipment is silly! Why a pasta machine costs about $1,900 and a 10 burner Range with 2 ovens cost $2,200 I'll never figure out🫠😂

Where my bakers at? For the longest time I hated baking. And I never thought I'd learn to make bread well. For me baking was a "hurry up and wait game." But then I started sourdough. Now I had to take a starter from a friend cause I couldn't get mine to start from scratch. But here we are over almost 3 years later and she's stronger than ever! I feed her 1 day before I use her, sometimes only once a month. Otherwise she lives in the fridge. Make a barm, let that raise on the counter overnight. Mix all ingredients in a stand mixer for 7 minutes. Stretch and fold every 30 minutes 3 times. Form. Raise for 90 min. Bake for 30min on 435! Great every time!
