Harold Leffall, Jr. Founder/CEO, Good Living Now
Cancer Survivor
TV Wellness Contributor Though bankrupt financially, his spirit to succeed and persevere were intensified.

It was in 1996, when going against conventional wisdom, Harold took a leap of faith and pursued his childhood dream of starting his own business. But it was less than a year after starting his business, Leffall Employment Agency, that Harold was forced to file bankruptcy and lost his home as well when the business failed to generate even enough sales to pay himself a salary. That experience along with some other valuable lessons learned along the way allowed him to rebound from these setbacks and grow his business to a multi-million dollar enterprise. In 2006, he started a nonprofit staffing firm with the mission of providing employment opportunities to individuals transitioning out of homelessness.

My Go-To Healing Broth for Chemo and Radiation RecoveryMy Go-To Healing Broth for Chemo and Radiation Recovery

This broth is packed with anti-inflammatory ingredients, making it an excellent base for soups or a nourishing broth on its own.

Ingredients:
2 tbsp extra virgin olive oil
2 large yellow onions, chopped (skins left on for color)
 4 carrots, chopped
 4 stalks celery, chopped
1 tbsp turmeric powder (or 2 inches fresh turmeric, sliced)
1 tbsp ginger (or 2 inches fresh)
 1 bunch fresh parsley
 1 tsp whole black peppercorns
 2 bay leaves
12 cups filtered or spring water
2 dried shiitake mushrooms (for umami)

Instructions:
1. Sauté: Heat the olive oil in a large stockpot over medium heat. Add the onions, carrots, and celery. Sauté for about 8–10 minutes until they begin to brown slightly, which builds the base flavor.
2. Aromatics: Add the turmeric, ginger, peppercorns, bay leaves, and mushrooms. Stir for 1–2 minutes until fragrant.
3. Simmer: Add the water and parsley. Bring to a boil, then reduce heat to low. Cover and simmer for 45–60 minutes.
4. Strain: Remove from heat and strain the broth through a fine-mesh sieve into a large bowl or storage containers, pressing on the solids to extract all the liquid.
5. Store: Let it cool completely before refrigerating for up to 5 days or freezing for up to 3 months.

Soothing Recovery Meal: Chemo & Radiation Support

Recovery calls for kindness—especially in the kitchen. This Savory Vegetable & Fonio Bowl is designed to be gentle on your system while delivering the hydration and minerals you need.

Ingredients:
1/2 cup Fonio (a tiny, ancient grain that is naturally gluten-free and quick-cooking)
1 ½ cups high-quality vegetable broth (provides essential electrolytes)
1/4 cup finely diced squash (ensure it is peeled and diced very small for easier digestion)
 1/4 cup finely grated carrots
1 teaspoon extra virgin olive oil (provides healthy fats)
1 teaspoon nutritional yeast (adds a savory, cheesy flavor and B vitamins)
Optional: A pinch of sea salt (if tolerated)

Instructions:
1. Simmer: In a small pot, bring the vegetable broth to a gentle boil.
2. Add Veggies: Add the finely diced squash and grated carrots to the broth. Let them simmer for about 2–3 minutes until they are very soft.
3. Cook Fonio: Stir in the fonio. Reduce heat to low, cover, and simmer for about 3–5 minutes, or until the liquid is absorbed and the texture is soft and porridge-like.
4. Finish: Remove from heat. Stir in the olive oil and nutritional yeast until well combined.
5. Serve or Prep: Eat warm for a soothing meal. If you prefer a smoother texture for sensitive days, let the mixture cool slightly, then blend until smooth.
