Veggie Stir-Fry: Packed with fresh, seasonal veggies like asparagus, spinach, and peas, this dish is quick, healthy, and completely customizable!

Ingredients:
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 cup snap peas, ends trimmed
- 2 cups fresh spinach
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp sesame oil
- 1 tsp sesame seeds (optional)

Instructions:
- Heat olive oil in a large skillet over medium heat.
- Add the asparagus and snap peas, and cook for about 5-7 minutes until tender-crisp.
- Add the minced garlic and cook for 1 more minute.
- Stir in the spinach and cook for another 2 minutes, just until wilted.
- Drizzle with soy sauce and sesame oil. Toss to coat, then sprinkle with sesame seeds (optional).
- Serve warm and enjoy!

Pro Tip: Mix and match with any veggies you have on hand! Try adding zucchini, bell peppers, mushrooms, or even carrots for a fun twist.

A quick, light meal that's perfect for a healthy May dinner or side dish.
