At my house, every Sunday = Pancake Day… and this stack is gluten-free, dairy-free optional, gut-friendly, and honestly better than the original.

Because you do not have to give up your favorite foods.

You just swap in ingredients that actually love you back.

🥞 Almond Flour Pancakes
Gluten-Free | Dairy-Free Option | Gut-Friendly

Ingredients:
2 eggs
1 tbsp flaxseed
3 tbsp almond milk
1 tsp vanilla extract
1 cup almond flour
1 tsp baking powder
Cinnamon to taste

Instructions:

1. Whisk eggs, flax , almond milk, and vanilla together.
2. Add almond flour, baking powder, and cinnamon. Mix until smooth.
3. Pour onto a lightly greased skillet over medium heat.
Cook 1 to 3 minutes per side until golden.
4. Top with fresh berries and a drizzle of 100% pure maple syrup.

That is it.

Simple, nourishing, and so satisfying.

Life doesn’t come with a manual. It comes with moments, messy, beautiful, and transformative that shape who we are.

I am not going to pretend my life has been perfect. It has not.

But within every stage, even the hard ones, there has been something good worth holding onto.

Be proud of your journey.

The the restarts, the moments you surprised yourself all brought you exactly where you are supposed to be.

There was a stage where confidence did not come naturally. I had the drive but I doubted myself. What I know now is that confidence is built one decision at a time. 💪

Today I am not scared to love myself and chase my own dreams.

STAGES OF LIFE 🦋 A REFLECTION

Life doesn’t come with a manual. It comes with moments, messy, beautiful, unexpected, and transformative that shape who we are and how we show up in the world.

Looking back, my life has not been perfect. Not even close.

But within every stage, even the hard ones, there has been something good worth holding onto.

Be Proud of Yourself and Your Journey 😍

Every step you have taken, every decision you made with the strength you had at the time, every time you got back up, that is something to be proud of.

Your journey is uniquely yours.

The detours, the restarts, the moments you surprised yourself all of it brought you exactly where you are supposed to be.

There was a stage in my life where confidence did not come naturally. I had the drive and the vision, but I doubted myself. That chapter was real. What I know now is that confidence is not something you wait to receive it is something you build, one decision at a time.

Today I am not scared to love myself, invest in my own dreams, and take up the space I have earned. 🦋

If you are in that chapter right now, keep going.

The version of you on the other side of that doubt is worth every uncomfortable step.

This is where I learned what stress really feels like in the body the fatigue, the imbalance, running on coffee and sheer determination. Many of us live here longer than we should.

🙈 My body finally demanded to be heard.

This is when nutrition, lifestyle, and intentional living stopped being concepts and started becoming my life. The changes were not just physical they were deeply personal.

Where I Am Now? 🙋‍♀️
Still a work in progress.
Still learning.
Still having the crazy days and they remind me I am human.

But now I come back to center faster. I know how to nourish my body, listen to it, and I know that taking care of yourself is not selfish. It is necessary.

I have found this to be true in every single situation in my life.

When you shift your focus to what is going right, something shifts inside of you.

Your mindset changes.
Your energy changes.
And then your actions start to change too.

The same is true for your health.

Start focusing on the positive steps you ARE taking.

The glass of water you drank this morning.
The walk you went on.
The meal you chose that made your body feel good.

Those small wins matter.

And when you acknowledge them, you start creating more of them.

It started with a piece of toast.

Gluten free bread, toasted golden.
A thick layer of creamy avocado.
Fresh cherry tomatoes, cilantro, a drizzle of olive oil, and shaved Parmesan on top.

That is it.
That is the whole recipe.

And yet it hits different every single time.

I have made this for breakfast alongside eggs. I have paired it with salmon or chicken for dinner. I have thrown it together on vacation with whatever was in the kitchen.
