Carrot Ginger Soup 🥕🥣

This meal is perfect for a cold wintery day. It’s packed with nutrients and is so delicious 😋. It’s also so quick & easy to make. We can quickly prepare the soup when we have a few minutes during baby’s nap time.

Ingredients: carrots (4-5 big ones or roughly half a pack of baby carrots), yellow onion, ginger, 2 sweet potatoes, organic veggie broth, spices (Italian seasoning, everyday seasoning from Trader Joe’s, salt, pepper), avocado oil, and raw organic honey.

‼️ Recipe Details ‼️
🥕 In a saucepan, heat up some avocado oil. While the saucepan is heating up, cut up the onion and toss it in.
🥕 Next, cut up the potatoes & carrots and place them in the saucepan once cut up.
🥕 Time to spice it up! Season with whatever you like - we used some Italian seasoning, ’s everyday seasoning, salt, and pepper. Then, add about 2 teaspoons of honey. Stir and let the veggies cook for another minute or two.
🥕 Add about 3 cups of veggie broth. You can add water as well if you think it needs more liquid. Add a bit more salt.
🥕 Bring the soup to a boil and then cover it & lower to low heat. Let it cook for about 15-20 minutes.
🥕 Pour the liquid into a blender and once it’s blended, serve & enjoy!

Throughout my pregnancy, I continued to exercise. I did a ton of prenatal yoga and would go on daily walks. It was truly the best thing for me to keep my body moving and myself in check mentally. There’s so many physical, mental and emotional changes that you experience in pregnancy and exercise helped keep me focused & energized. It’s even more important to listen to your body and know when to just relax instead. Now that I’ve been cleared by my OBGYN, I’m going to jump start on my fitness journey after not exercising since my daughter’s birth (except for walks, which I’ve continued to go on when I felt up for it).

Prenatal yoga was incredible for me. Benefits of prenatal yoga:

🧘‍♀️It helped stretch out all my muscles and alleviated a lot of body pains I was experiencing (neck, arms, back, legs, etc.).
🧘‍♀️ Stress relief - so much is unknown (in pregnancy and in life in general) and it’s easy to feel stressed regularly. It’s also super common to feel anxious about delivery and what’s to come. Yoga helps so much to relieve yourself of stress.
🧘‍♀️ Connection with baby - yoga brings you back to your center and you are able to focus inwards more closely. This is your time with you and your baby!
🧘‍♀️ Improves blood flow for both you and baby!
🧘‍♀️ There’s tons of yoga positions that can be helpful for labor. You can practice them and help strengthen your body for delivery!

If you’re pregnant and your OBGYN clears you for exercise, try prenatal yoga! You won’t be sorry. I am now doing postpartum yoga to help re-establish my core and I’m loving it.

Black Bean Mango Rice Bowl 😋🤤

Truly a staple at the Meltzer household that we make weekly largely bc it’s so quick and easy. We mix it up and add other ingredients based on what we have at home (like zucchini, broccoli, etc.) but this is our “basic” recipe.

Made with: cilantro, garlic, black beans, mango, peppers, onions, & avocado, served on rice. Lime-olive oil dressing on top.

‼️ Recipe Details ‼️

Start off by finely chopping the onions and garlic, and tossing onto a pan that’s been heated with avocado oil. Cut up a pepper and tomatoes and add to the mixture. Season to your liking (we usually use a fajita blend along with a dash of Cajun seasoning and Mexican lime seasoning from ).

While that cooks, we cut up the mango and avocado. Typically, once we finish cutting up the mango, the pan has been cooked enough so we add the black beans in and season further.

Lastly, juice 1-2 limes into a small bowl and add about a tablespoon of olive oil. Cut up a handful of cilantro and add to the mixture. Season with salt and pepper, and mix together.

Serve everything up and drizzle the cilantro lime dressing over the top. Delicious! 🥰

On January 15th, we welcomed our beautiful baby girl into the world! Aria made us first time parents and we are so happy to be her parents. 💕

Newborn life isn’t easy and adjusting to a new way of life has its challenges, but one thing that has stayed very important to us is the necessity for a healthy diet. Because Maya is breastfeeding, we especially want to make sure to eat well so that only the best is passed onto our daughter.

You may have noticed that we didn’t post as frequently towards the end of last year and that’s because of Maya’s pregnancy. We had to cook according to pregnancy cravings, which meant that we weren’t eating as “cleanly” as months prior but we decided that we need to accept the cravings and just go with the flow! We also were very busy preparing everything for the baby.

Now that things have settled down a bit at 7 weeks after birth, we are ready to jump right back into it. We will try to feature quicker meals to better suit our needs and once our girl starts eating solids, we’ll be featuring baby foods as well.

Spaghetti Squash Pad Thai 🥰🍜

🎊 RECIPE 🎊

- Roast your halved spaghetti squash face down at 500 degrees for 25 minutes.
- Meanwhile sauté minced garlic, basil, and shallots.
- Make some scramble eggs too to add into the sautéed veggies (substitute here for tofu if you’d like).
- Chop up cilantro and scallions and place on the side.
- For the sauce, add 2 tbsp of sesame oil, 1 tbsp of rice vinegar, 1 tsp of maple syrup, 1 tsp of sriracha.
- Remove the spaghetti squash from the oven and use a fork to loosen out all of the “natures noodles”.
- Add the spaghetti squash to the veggies and then add the sauce as well as the scallions and cilantro.
- Cook for another 5 minutes, serve and top with peanuts.
