Crispy Broccoli Edamame Patties 🥦

A veggie burger patty with a golden edge, a chunky green center, and a creamy garlic yogurt dip. Edamame brings plant protein, while the edamame, broccoli, and oats add fiber.

Makes 4 patties:
• 2 cups thawed, shelled edamame
• 1 cup finely chopped, steamed broccoli
• 1 egg
• ⅓ cup rolled oats
• 1 tsp garlic powder
• Salt and black pepper
• A little oil for the skillet

Roughly mash the edamame. Mix in the broccoli, egg, oats, and seasonings, then shape into 4 patties. Cook in a lightly oiled skillet over medium heat for about 4–5 minutes per side, until golden and cooked through. If the mixture feels too wet to shape, add another spoonful of oats.

For the dip, stir minced garlic into plain Greek yogurt. Add a squeeze of lemon if you like.

Microwave Pumpkin Pie Protein Cake 🎃🥣

Soft, fluffy, warm, and packed with cozy pumpkin pie flavor. This easy microwave breakfast cake comes together in minutes with pumpkin, oats, Greek yogurt, and vanilla protein powder.

Recipe:
• 1/3 cup pumpkin puree
• 1 whole egg
• 2 tbsp plain Greek yogurt
• 2 tbsp milk
• 1 tbsp maple syrup
• 1/2 tsp vanilla
• 1/2 cup rolled oats
• 2 tbsp vanilla protein powder
• 1/2 tsp pumpkin pie spice
• 1/2 tsp baking powder
• Small pinch of salt

How to make it:
Mix the pumpkin puree, egg, Greek yogurt, milk, maple syrup, and vanilla until smooth.

Add the rolled oats, vanilla protein powder, pumpkin pie spice, baking powder, and salt. Mix until fully combined.

Pour the thick pumpkin batter into a small microwave-safe ramekin.

Microwave for 2–3 minutes, or until the top looks set and the center is cooked through. Let it rest for about 1 minute.

Top with a spoonful of plain Greek yogurt and a light dusting of pumpkin pie spice.

Warm pumpkin pie flavor, but made for breakfast. 🎃

These Microwave Chocolate Banana Brownie Oats are soft, chocolatey, and made with simple breakfast ingredients you can find in almost any grocery store.

They’re made with oats, banana, Greek yogurt, cocoa, and chocolate chips, so you get that brownie-style texture without turning breakfast into a full baking project.

Microwave Chocolate Banana Brownie Oats

Ingredients:
• 1 ripe banana
• 1/2 cup rolled oats
• 1 egg
• 1/4 cup milk
• 1/4 cup plain Greek yogurt
• 1 1/2 tbsp cocoa powder
• 1 tbsp maple syrup or honey
• 1/2 tsp vanilla extract
• 1/2 tsp baking powder
• 1 tbsp mini chocolate chips

How to make it:

Mash the banana in a clear mixing bowl.
Add the egg, milk, Greek yogurt, maple syrup, and vanilla. Mix until smooth.
Add the oats, cocoa powder, and baking powder. Stir into a thick chocolate batter.
Fold in the mini chocolate chips.
Transfer to a microwave-safe ramekin.
Microwave on high for about 2–3 minutes, depending on your microwave. Start checking around 2 minutes.
Let it rest for about 1 minute, then dig into that soft chocolate center.

For the best texture, keep the center slightly soft rather than overcooking it.

Ingredients

Oat Cinnamon Crust
• 1 cup rolled oats
• 1/2 cup oat flour
• 1 tsp cinnamon
• 2 tbsp maple syrup
• 2 tbsp melted butter or coconut oil

Protein Cheesecake Layer
• 1 cup plain Greek yogurt
• 1 cup cottage cheese
• 1 whole egg
• 1 scoop vanilla protein powder
• 2 tbsp maple syrup or honey
• 1 tsp vanilla extract
• 1/2 tsp cinnamon

Apple Pie Topping
• 1 medium red apple, diced small
• 1 tsp cinnamon
• 1 tbsp maple syrup
• 1 tsp lemon juice, optional

How to make it
Press the oat crust into an 8x8 baking dish. Blend the cheesecake ingredients until smooth, then pour over the crust. Toss the apple pieces with cinnamon and maple syrup, then spread them over the top.

Bake at 350°F / 175°C for about 30–35 minutes, or until the center is set. Let it cool, chill if you want cleaner slices, then cut into 9 bars.

Protein from Greek yogurt, cottage cheese, and protein powder helps support muscles, while apples and oats add fiber.
