Fun Facts about Dandelion: 🌻

-Dandelion contains more beta-carotene than carrots and more iron and calcium than spinach!

-Dandelion gives off Ethylene gas which aids in ripening crops and fruits! This happens naturally outside but if you want your avocados, bananas, peaches or tomatoes to ripen faster, put some dandelion leaves and flowers with you fruit in a paper bag overnight!

-Harvesting the roots in the springtime vs the autumn provides different medicine! In the fall the roots are thick, bitter and full of inulin! During the winter the inulin is converted to fructose which makes the roots sweeter and thinner In the springtime, but also springtime roots contain more Taraxacin which stimulates bile production!

-You can’t judge a Root by its flower and leaves! Sometimes the plants with the smallest leaves and Flowers have the longest taproot!

-Before the 1800s people would actually pull grass to make room for dandelion and other common weeds for food.

- At the end of WWII, herbicide companies marketed to men coming home from fighting to wage “war against weeds”. They told a story of how perfect green lawns were a sign of higher society. The war against weeds runs deep - have you seen any people (older men perhaps?) in your neighborhood still pulling dandelions out of their yards?

🌼 I love dandelion, for its sheer beauty and tenacity. How they grow happily and abundantly everywhere despite the war that has been waged against them. Pushing through cement cracks and populating desolate places.

Every part of them is medicinal and edible. I love eating the butter greens in the springtime, digging up the bitter roots for tinctures and roasted tea preparations, and using their petals as the most lovely infused oil for salves. There are a million ways to work with dandelion. What is your favorite?

Nettle soup! 🥣

It’s as delicious as it looks & super easy. Nettle is one of my favorite spring greens. It’s so fresh, tasty and delicious. It can be used in place of pretty much any green in recipes and it’s loaded with nutrients. This recipe was super simple and you can also build upon it and get creative!

Nettle Soup

3 garlic cloves
1 onion
3-4 potatoes
butter or olive oil (I used butter)
4 cups-ish broth of choice. I used mushroom and chicken bone broth for this recipe (which was delicious!)
2-3 cups tightly packed fresh nettle leaves and stems
Salt and pep
Lemon slices to squeeze on top before you eat! (This was the best)

Sauté chopped onion and garlic with butter in the bottom of a sauce pan until aromatic and translucent. Add in chopped potatoes and sauté. Add in broth and bring to a simmer. Add in your nettle and let the soup simmer until the greens and potatoes are soft, season to taste. Let cool slightly and blend with an immersion blender until smooth (or blend in a blender). Serve and garnish with fresh violets and squeeze a slice of lemon.

This soup was so refreshing and nourishing and it was kid-approved which is a huge bonus in my house!

There are endless variations to this. You can make it creamy, coconuty, add more veggies, or spice it up!

Spruce tips are bursting this week! Here are some harvests from years past. Like most seasonal things, each time they come around I am craving. They are so juicy and fresh and they burst with flavor in your mouth. They are bright, citrusy, juicy, resinous and astringent.

There are so many fun things to create with these fluffy conifer tips. Other than eating them right off the tree, I love popping a couple In some tea or water to infuse for a yummy drink, spruce tip sugar is divine, syrup, vinegars and more.

Spruce tip vinegar is a super easy and flavorful preparation. Just gather a couple handfuls of spruce tips (identifying them correctly of course), add to a jar and cover with ACV. Let infuse for at least 2-4 weeks and strain. Use as is, or combine with honey for a super medicinal Oxymel! 🌲
