Just a small glimpse of what’s coming for the week.

Planning helps me not have to think about what I’m putting in my body.

This week I’m focusing on high protein and fiber. Protein bowls are the way to go for me! A busy week means simple meal prep.

Breakfast:

Hard boiled eggs and oatmeal bake

Lunch:

Chicken and Quinoa Bowls 🍲

I mix things up with different sauces and I know the start of the week will be set.

Dinner:

Grilled chicken thighs and lots of roasted root veggies

How I meal prep on a busy Sunday in between sports games.

I don’t sit and have my coffee on the couch— I have it while I get breakfast going.

I have a plan for the gap between games. What I’ll make and how much. That way I’m not rushing and leaving the kitchen a mess.

Using tools like the grill and quick easy meals helps cut down on time and clean up.

Today I got the first 3 days of the week prepped with breakfasts, lunches, and a few snacks!

High Protein Breakfast Bake (taste like cake).- 8X8 pan will about 1.5 cups old fashioned oats- Mixed in 1/2 cup vanilla...

High Protein Breakfast Bake (taste like cake).

- 8X8 pan will about 1.5 cups old fashioned oats
- Mixed in 1/2 cup vanilla protein powder
- Mixed 3 eggs with about 2 cups of almond milk until smooth and poured over the oats (add more milk if needed, it should be enough to fully cover the oats)
- Mix in berries

Bake at 350 degrees until edges are browned and middle is fully cooked

Cut the oatmeal bake into 4 squares…each has about 25-30g of protein

Easy dinner recipes for busy weeknights.

- Grilled chicken (I had meal prepped before but you can buy pre cooked or use rotisserie
- Roasted broccoli
- Red lentil pasta

Mix everything together and top with a balsamic dressing (or pesto works too!)

I make my own balsamic with fresh garlic and crushed red pepper 👌🏻

3 Things I do on Sundays that make my Monday easier.

- Breakfast is always prepped to help get the week started on the right foot

-Monday dinner is made. It makes the start of the week a little less stressful and there’s no guessing games

-Kids lunches are made and snacks are packed. If I had enough time to prep more grown up lunches are made too

Every weekend is a little different and schedules always change but for the most part those little things help settle the Sunday Scaries and keep Mondays as stress free as possible.

Pancakes are a breakfast classic but they are also highly processed. Smothered in butter and syrup doesn’t make for a great choice to start the day.

Here are 3 things I do to level up pancakes to help keep me on track and start the kids off right in the morning.

✔️ I buy a plant based protein pancake mix
✔️ I add in a cup of old fashioned oats
✔️ I add in 1/4 cup ground flaxseed

This helps to increase protein and fiber. I will sometimes add in berries.

The kids still like organic maple syrup— I choose a local honey infused with cinnamon, black pepper, and tumeric.

Sunday Meal Prep— 3 hours here’s what I got 👇🏼

- 3 weeknight family dinners
- 3 mornings of kids breakfasts
- 3 mornings of grown up breakfasts
- 3 workweek lunches
- 2 school day lunches

Some of my go-to things to prep during busy weeks.

-Casseroles or one pan meals. Easy to load in veggies and easy for the whole family to enjoy

-Taco bowls— big fan 🎉— easy to prep and everyone can make their own and VERY EASY to make the same proteins but switch up what you’re making, burritos, nachos, bowls, tacos 🌮

- Sheet pan roasted veggies 🥦 these are great to make and add into any meal to get goose veggies in OR start your day ahead of the game. I’ve been adding my veggies to my eggs in the morning 🍳
