Ingredients
For the Muffins
2 cups shredded mozzarella cheese
4 oz cream cheese, softened
2 large eggs
1 cup almond flour
1 tsp baking powder
1 tsp Italian seasoning
Β½ tsp garlic powder
ΒΌ tsp salt
Pizza Toppings
Β½ cup sugar-free pizza sauce
1 cup shredded mozzarella cheese
Β½ cup sliced beef sausage or mini pepperoni
1 tbsp chopped parsley
Fresh basil leaves for garnish

Instructions
Preheat Oven
Preheat oven to 375Β°F (190Β°C).
Grease a muffin tin or line with silicone muffin cups.
Make the Batter
Microwave mozzarella and cream cheese for 60–90 seconds until melted.
Stir until smooth.
Add eggs and mix well.
Fold in almond flour, baking powder, Italian seasoning, garlic powder, and salt.
Fill Muffin Tin
Divide batter evenly among 10–12 muffin cups.
Add a teaspoon of pizza sauce to each and gently swirl.
Add Toppings
Sprinkle mozzarella cheese on top.
Add sausage slices or mini pepperoni.
Bake
Bake for 18–22 minutes until golden brown and cooked through.
Broil for 1–2 minutes for extra cheesy browning if desired.
Serve
Let cool for 5 minutes.
Garnish with parsley and fresh basil.

Creamy Lemon Garlic Chicken with Rice & Broccoli

Cook Time: 25 minutes

Ingredients

For the Chicken

4 boneless, skinless chicken breasts
1 tsp salt
Β½ tsp black pepper
1 tsp paprika
1 tbsp olive oil

For the Creamy Lemon Sauce

2 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
Β½ cup chicken broth
Juice of 1 lemon
Β½ tsp red pepper flakes (optional)
2 tbsp chopped fresh parsley

For the Sides

2 cups cooked white rice
2 cups broccoli florets
1 lb baby potatoes, halved
1 tbsp olive oil
Salt and pepper to taste

Instructions
Roast the Potatoes
Preheat oven to 400Β°F (200Β°C).
Toss potatoes with olive oil, salt, and pepper.
Roast for 25–30 minutes until golden brown.
Cook the Broccoli
Steam broccoli for 4–5 minutes until tender-crisp.
Season lightly with salt.
Prepare the Chicken
Season chicken with salt, pepper, and paprika.
Heat olive oil in a large skillet over medium-high heat.
Cook chicken for 5–6 minutes per side until golden and fully cooked.
Remove and set aside.
Make the Sauce
In the same skillet, melt butter.
Add garlic and cook for 30 seconds.
Pour in chicken broth and heavy cream.
Stir in lemon juice and red pepper flakes.
Simmer for 3–4 minutes until slightly thickened.
Finish
Return chicken to the skillet and spoon sauce over the top.
Sprinkle with fresh parsley.
Garnish with lemon slices.
Serve
Plate the chicken with rice, roasted potatoes, and broccoli.
Drizzle extra sauce over everything and enjoy.
