Ingredients
For the Muffins
2 cups shredded mozzarella cheese
4 oz cream cheese, softened
2 large eggs
1 cup almond flour
1 tsp baking powder
1 tsp Italian seasoning
Β½ tsp garlic powder
ΒΌ tsp salt
Pizza Toppings
Β½ cup sugar-free pizza sauce
1 cup shredded mozzarella cheese
Β½ cup sliced beef sausage or mini pepperoni
1 tbsp chopped parsley
Fresh basil leaves for garnish
Instructions
Preheat Oven
Preheat oven to 375Β°F (190Β°C).
Grease a muffin tin or line with silicone muffin cups.
Make the Batter
Microwave mozzarella and cream cheese for 60β90 seconds until melted.
Stir until smooth.
Add eggs and mix well.
Fold in almond flour, baking powder, Italian seasoning, garlic powder, and salt.
Fill Muffin Tin
Divide batter evenly among 10β12 muffin cups.
Add a teaspoon of pizza sauce to each and gently swirl.
Add Toppings
Sprinkle mozzarella cheese on top.
Add sausage slices or mini pepperoni.
Bake
Bake for 18β22 minutes until golden brown and cooked through.
Broil for 1β2 minutes for extra cheesy browning if desired.
Serve
Let cool for 5 minutes.
Garnish with parsley and fresh basil.
