Asian Cucumber Salad inspired by Shred Happens

One thing I've come to appreciate in midlife is simple, nourishing meals that don't take hours to prepare. This one definitely fits the bill.

I made a few substitutions because I didn't have everything on hand. Mine included cucumber, onions, pistachios, arugula (rocket), delicious sunflower & broccoli sprouts from Southern Harvest Microgreens, sesame oil, and rice wine vinegar.

I used it as the base and topped it with sautéed fish. It was light, fresh, crunchy, and full of flavour.

A friendly tip from experience: this salad is best enjoyed fresh. If you leave the cucumbers sitting in the dressing for too long, they'll soften and take on more of a pickled flavour.

We spend years preparing our children to leave home.

But how many of us prepare ourselves?

Will we ever be completely ready? Probably not.

But I do believe we can make the transition gentler by investing in ourselves long before the nest becomes empty.

Because we'll never stop being mums.

We'll simply become mums in a different way. x

I'm experimenting with warm soup for breakfast. It may not win any beauty contests, and it's definitely not my prettiest meal, but it certainly wins on flavour!

Chicken bone broth, fresh ginger, fennel and caraway seeds, herbs, carrots, zucchini, mushrooms, leftover quinoa, and scrambled eggs.

One thing I've learnt in midlife is that nourishing your body isn't about creating picture perfect meals. It's about giving your body what it needs to feel its best.

The soup freezes beautifully too... just not the scrambled eggs! 😂

So grateful for the delicious fresh eggs from Three Sister Farms. Nothing beats fresh, local ingredients.

If I could sit down with the version of me whose daughter was about to leave for college, this is what I'd say...

I wish I'd started preparing for the empty nest before my daughter left.

I spent so much time helping her prepare for her next chapter that I forgot to prepare for mine.

It wasn't until the house felt quiet that I realised I hadn't given much thought to what I wanted this next chapter of my life to look like.

If I had my time again, here's what I'd do differently.

I'd make my health a priority.

I'd reconnect with the friendships I'd put on hold.

I'd rediscover the things that made me feel like me again.

I'd say yes to new experiences.

I'd remind myself that being a mother is part of who I am, but it isn't all of who I am.

You can't stop your child growing up, and you can't stop them leaving.

But you can start preparing for your next chapter.

Because your child is getting ready for their next chapter...

You deserve one too.

Has cooking changed since your children left home?

For some, it's hard to adjust to cooking for one or two. Recipes suddenly seem too big, there are more leftovers than you know what to do with, and it's easy to lose your enthusiasm for cooking.

For others, it's a chance to enjoy cooking again, try new recipes, and rediscover the pleasure of being in the kitchen.

Neither is right or wrong. It's simply another adjustment that comes with this stage of life.

For me, I still focus on nourishing meals, but these days I often make the most of whatever I have in the fridge.

Yesterday's lunch was my "everything but the kitchen sink" salad. I tossed together endive, parsley, leftover quinoa, walnuts, asparagus, sunflower sprouts, and langoustines, then dressed them with extra-virgin olive oil, Dijon mustard, apple cider vinegar, and a pinch of sea salt. It was simple, colourful, packed with protein, healthy fats, fibre, and, most importantly, delicious.

If you're looking for a little inspiration, I recently discovered The Empty Nest Kitchen. It's full of ideas for cooking for one or two, while embracing this new season of life.
