People think farming is farming. Land, water, seeds, done. It's not.

A village in the hills has generations of soil knowledge, the right elevation, the right microclimate, and farmers who've grown the same crop since before "organic" was a marketing word.

A city or even flat lowland farmland doesn't have any of that. You can force a crop to grow almost anywhere with enough fertilizer and irrigation. But you can't force curcumin content. You can't force flavor. You can't force the compounds that make Ceylon cinnamon taste like Ceylon cinnamon instead of cassia bark with a good PR team.
