How was your holiday season? We took time off from making olive oil to start brining the last of our Kalamata olives! Immediately after they are picked they rest in water to start removing the bitterness. Then, flush them in our brine for a week or so until we jar them. We'll check back once we have them in jars to cure for a few months!
