✨RECIPE Low-Sugar Gluten-Free Blueberry Pie 🫐🥧
INGREDIENTS:
Pie Crust
• 1 package Gluten-Free Pie Crust Mix
(makes 2 crusts – you’ll use 1 for a single pie or both for double crust usually requires butter/oil + water to form dough.
Low-Sugar Blueberry Filling
• 5 cups fresh or frozen organic blueberries 🫐
• 2–3 tbsp maple syrup or honey (adjust to taste)
• 2 tbsp arrowroot powder or cornstarch
• 1 tbsp lemon juice
• 1 tsp lemon zest
• 1 tsp vanilla extract
• pinch of salt
• 1 tbsp butter or coconut oil (optional, for richer flavor)

INSTRUCTIONS:
1. Prepare the crust
1. Make the dough according to King Arthur’s instructions.
2. Roll out and place in a 9-inch pie dish.
3. If making a top crust, roll the second dough portion and set aside.
2. Make the filling
1. In a bowl, gently mix blueberries, maple syrup/honey, arrowroot, lemon juice, zest, vanilla, and salt.
2. Make sure the blueberries are evenly coated — arrowroot will thicken the juice as it bakes.
3. Assemble the pie
1. Pour the filling into the prepared crust.
2. Dot with butter/coconut oil if using.
3. Add the top crust or a lattice, if desired, and cut small vents.
4. Bake
• Preheat oven to 375°F (190°C).
• Bake 45–55 minutes, until crust is golden and filling is bubbly.
• Optional: brush top crust with egg wash for a golden finish.
5. Cool
• Let the pie cool 2–3 hours so the filling thickens properly.
