Cowboy Caviar is a summer favorite in my house. Our avocados 🥑 were not ripe yet, so for this one I used:
-1 can each of corn and black eye peas
-Chopped tomatoes, cilantro, 1/4 of one jalapeño, 3 garlic cloves
-Diced onion, pepper, cucumber
-Salt, pepper, 2 TBSP red wine vinegar, drizzle of honey

This is a great recipe to modify & make your own!
