If you're anything like me, you're also busy trying to capture and preserve as much of your garden harvest or farm share.

This week it was all about the tomatoes -
- dehydrated (sundried style) tomatoes
- quick pickled tomatoes, and
- fresh tomato sauce in under an hour.

All super easy, with minimal ingredients and using seasonal herbs!

Pickling is one of the oldestethods of food preservation, whether you're fermenting or brining.

Next week there are TWO opportunities to join me for free pickling classes where we'll talk about the benefits of pickling and taste several fun recipes -

From the classic cucs and dilly beans to pickled onions and peaches!

Thanks to Griffin Hospital and Massaro Community Farm for hosting me.

Are you drowning in fresh produce from your garden?

Next week I'm offering not one, but TWO, opportunities at pickling basics!

Join me either at Massaro Community Farm or Griffin's Center for Healthy Living (in Oxford) where we'll
- discuss pickling basics including lactofermentation and brine pickling
- the benefits of pickled food, esp in digestion
- sample some unique recipes, beyond cucs and dilly beans

What would you like to try pickled???

Many of us have only ever eaten eggplant fried and/smothered in cheese and sauce. But roasted eggplant has a wonderful umami flavor that can deepen dishes.

Comment "eggplant" and I'll send you this recipe that takes less than 30 minutes start to finish.

Friends: we are in peak harvest season across CT! This means food pantries working so hard to make healthy food available to our communities often have to throw out food like this....it hurts my heart.

But it drives home the point I made in my TedX talk last fall: we don't have a lack of food in this country, we need more agile and adaptive distribution systems that can get food like this to those who need it most (or convert it into meals that can be stored long term), which often includes today's working middle class families.

Sign up with the Food Rescue Hero app, one of our Valley community gardens or one of our local food pantries. They need your help moving food as much or as more than they need your donations ❤️🫶

Making the most of your garden harvest: keep picking your bush or climbing beans almost daily during peak season.

Fresh beans can be blanched & frozen, pickled or canned in a simple salt brine for later eating.

Don't yuck my yum! If you canneat tuna, you can eat sardines.

On crackers, crumbled in a salad, blended into a flavorful dressing or sauce. Give them a try!
