Aimee- I've lost 47 lbs, and over 24 inches!! My fibro pain has lessened by half or more and I've not had to take the pain pills or muscle relaxers except once or twice a month. I truly cannot explain how much better I feel as a whole.

Surf & Turf in Creamy Cajun Sauce

Ingredients

1 tsp olive oil
5 ounces steak
7 ounces shrimp
10.5 ounces cauliflower
1/2 tbsp butter
1/4 cup veg broth
1 cup almond milk
1/2 tsp cajun seasoning
1 tsp dijon mustard
1 clove garlic
2 TBSP reduced fat parmesan cheese
1 tsp lemon juice
Sprinkle parsley

Directions

Heat the oil in a large skillet over medium-high heat, add the steaks and sear until lightly browned on both sides and cooked to the desired level of doneness, before setting aside.
Reduce the heat to medium, add the butter and let it melt before adding the shrimp and cooking until just pink on both sides, about 1-2 minutes per side, and set aside.
In a separate small pot, add the garlic and cook until fragrant, about a minute.
Add the vegetable broth and deglaze the pan by scraping up any brown bits from the bottom with a wooden spoon as the broth sizzles.
Add the almond milk, mix in the dijon mustard and cajun seasoning, bring to a low boil and let simmer for a minute.
Mix in the cheese and let it melt into the sauce.
Mix in the lemon juice, parsley and shrimp then set aside.
Place cauliflower florets (uncooked) into blender or food processor. Once riced, add to frying pan and steam with a small amount of water.
Plate the rice then add steak and creamy shrimp sauce and serve!

Serves 2, per serving: 1 lean, 3 green, 3 condiments, .5 HF (for the shrimp)

Cajun Jambalaya

Serves: 1

1 Lean

3 Greens

2.75 Condiments

1 Healthy Fat

2 oz. Hillshire Farm Lite Smoked Sausage (1/4 lean)

4.5 oz. Shrimp or 4 oz. cooked OR 4 oz. cooked Boneless Skinless Chicken Breasts (3/4 lean)

¼ C. Green Bell Peppers chopped or 1.2 oz. (1/2 green)

¼ C. Red Bell Pepper chopped or 1.2 oz. (1/2 green)

1 C. Canned Diced Tomatoes – less than 5 carbs per serv. Or 8.46 oz. (2 greens)

½ Tsp. Paprika (1 cond)

¼ Tsp. Oregano (1/2 cond)

¼ Tsp. Thyme (1/4 cond)

¼ Tsp. Garlic Powder (1/2 cond)

1 Bay Leaf (1/2 cond)

1 Tsp. Olive Oil (healthy fat)

½ C. Water (as needed)

You could also do 3 Oz. of Chicken and 3.5 oz. of Shrimp which Nutrition Support recommends instead of the sausage.

In a skillet sauté peppers in the olive oil.

Add the canned tomatoes, spices and water (as needed to make a sauce) and simmer on medium heat until all the veggies are tender and the liquid have evaporated a little bit.

Stir in your choices of protein and stir until all the remainder sauce and protein is heated through. (This will eliminate shrinkage of the meat unless you are using raw meats but the ones I used were already cooked.

REMOVE THE BAY LEAF AND DISCARD, Serve immediately.

This is about so much more than weight loss.

Joe committed to a metabolic reset, and in just 7 weeks he’s seeing improvements not only in how he looks, but in markers that matter—blood pressure, cholesterol, and A1c. That is powerful.

Real transformation is about improving health from the inside out… and Joe is doing exactly that. He says he feels incredible!!!

Help me celebrate Joe for committing to his health this month!
