Banana Pumpkin Muffins! 🍌🎃🧁

These will melt in your mouth and make your house smell delicious! These are perfect for breakfast! Enough said….let’s get into it! ⬇️

Ingredients: (makes 12 muffins)
- muffin cups
- Muffin tin
- Non stick spray
- 3 ripe bananas
- 2 eggs
- 1/4 cup pure maple syrup
- 1/4 cup pumpkin butter
- 8 tbsp I can’t believe it’s not butter
- 2 tbsp brown sugar
- 1 tsp of vanilla
- 1 tsp of pumpkin spice
- Dash of salt
- 1 tbsp of baking powder
- 1 1/2 cups all purpose flour

Directions:
1. Preheat oven to 350F. Fill your muffin tin with your muffin cups and spray each cup.
2. In a mixer, combine: bananas, eggs, maple syrup, pumpkin butter, vanilla, melted butter, pumpkin spice, and brown sugar. Keep mixer on the whole time on a medium to low speed.
3. In a separate bowl, fork together flour, baking powder and salt until even.
4. Add in flour mixture to to banana mixture until no streaks are left.
5. Using a liquid measuring cup, scoop out your mixture and pour into each muffin cup. I find this the easiest way.
6. Bake for 19 minutes. I found this to be perfect! Move to a wire rack and let cool completely! Store in an airtight container in fridge up to a week.
7. Enjoy and tag

Healthy Sweet Tooth Pumpkin Dip! 🧡🍏

I was craving something sweet last night, but didn’t want to indulge in something full of sugar. Once I made this and tasted it I was SHOOK. So let’s check it out! ⬇️

Healthy Sweet Tooth Pumpkin Dip! 🧡🍏

Ingredients:
- 1/4 cup plain Greek yogurt
- 2 tbsp of pumpkin butter
- dash of cinnamon
- drop of honey

Directions:
1. In a small dish, combine all ingredients
2. Pair with apples, graham crackers, teddy grahams, or anything you can think of!
3. Enjoy and tag

Pumpkin Spice Overnight Oats! 🎃🧡

I whipped this together in no time! Try this for your next quick, easy and healthy breakfast! Feeling inspired to create new recipes with the weather starting to change! This organic all natural pumpkin butter just makes this recipe. 🤤

Once I was getting my Master’s Degree and working constantly I had no time to create new recipes or even really enjoy creating in the kitchen anymore. It was always quick meals or eating next to my laptop. Now that life feels more at a “normal” pace, I’m excited to get back in the kitchen and bring you some delicious recipes!

Pumpkin Spice Overnight Oats! 🧡

Ingredients:
- 1/2 cup of oats
- 1/4 cup of Unsweetened almond milk
- 2 heaping spoonfuls of plain Greek yogurt
- 2 tbsp of pumpkin butter
- 1 tbsp honey
- Dash of cinnamon
- 1/2 apple
- Container + lid

Directions:
1. Scoop 1/2 cup of oats and pour into container.
2. Pour milk into container just barely covering the oats.
3. Add in Greek yogurt, pumpkin butter, honey and cinnamon.
4. Tighten lid on and shake to combine.
5. Place in fridge overnight.
6. In the morning, cut up 1/2 an apple and top your overnight oats! This adds flavor and freshness! Enjoy!

It’s been a MINUTE, but I’m so excited for the warmer weather, sunshine, and spring/summer food! 😍

Today, I want to talk about the importance of fueling your body properly!

The better we fuel our bodies the better we are going to feel. That comes with eating foods low in sodium, added sugars, and saturated fats. We should aim to have fruits, veggies, proteins (animal or plant), grains (try to make 1/2 your grains whole grains), and dairy (your preference).

No food is “good” or “bad”; however, the more we eat those “sometimes” foods, the more we are going to not feel our best and unfortunately the more sugar, salt and fat you eat the more your mind/body craves it.

Start practicing healthy habits and fuel your body with whole foods that will give your body vitamins, minerals, and nutrients. We are just like a car. If we don’t take care of our vehicles they won’t last very long and will start to have problems. The more you fuel it properly and give it what it needs the longer the car will run.
