Dinner is the perfect opportunity to add even more plant diversity to your day—without making an extra complicated meal. One-pan dinners make it easy to pack in veggies, herbs, spices, and protein, all in one dish. 🌱

One of my favorite go-to dinners includes:
🍚 Brown rice
🧈 Grass-fed butter or avocado oil
🫑 Red bell pepper
🧄 Garlic
🐓 Chicken (or swap in beans and lentils for a vegetarian option)
🌿 Italian seasoning, smoked paprika, and other herbs & spices
🫛 String beans

Don’t forget—herbs and spices count toward your weekly plant goal, too! 🌿

By the end of the day, this series included:
🥬 8 vegetables
🍎 4 fruits
🌾 2 grains
🌰 3 nuts
🌱 3 seeds
🫘 1 legume
🌿 16 herbs & spices

That’s a total of 37 different plant foods in one day! 🎉

One of my favorite afternoon snacks includes:
🫐 Heated blueberries
🥣 Unsweetened Cashew yogurt
🌱 Chia seeds
🥥 Unsweetened shaved coconut
🌰 Pecans
✨ Cinnamon

Bonus tip: Heating blueberries can make their polyphenols more bioavailable, meaning your body may absorb them more easily. 🫐
