ITS BACK TO SCHOOL TIME!!! 🏫

Well, school started yesterday, but I'm already exhausted and forgot to post 🤣

My CHP behind-the-wheel bus driving test is scheduled for next Wednesday, but in the meantime, I get to drive some very special kiddos to and from school!!!!! 🙏💪🤞

Being truly healthy has always been important to me, while my weight was only a factor when it affected my overall health.

This past year, I put on 30+ pounds and I attributed it to eating apple fritters and donuts last fall while working in the Apple Hill area.

However, since I ended the abusive relationship, I have - without conscientious effort - lost 14 pounds.

Mental and emotional health absolutely impact physical health. Cortisol overload and being in a constant state of fight, flight or freeze will 100% cause your body to hold onto unhealthy weightin the form of inflammation and fat.

It wasnt the fritters or the donuts...

I can say with absolute confidence that regaining my peace and removing the daily threat of abuse and violence has allowed my body to begin its journey back to a state of optimal health and wellness.

Started the day attempting to put some protein in the freezer, but realized quickly that I needed to sharpen my knives better and order xacto blades and razor knife blades.

Only got one done and it fed the dogs pretty well for today!

But in the meantime, its hot and I needed nourishment...

Cucumber Basil Gazpacho has entered the chat!!!! 🎉

Blended cucs, basil and shish*to peppers - all from my garden. Added some goat cheese, olive oil, lemon juice and pink salt.

Blend.

Enjoy!!!

I made enough for a couple more servings, so in the fridge it goes. Can't wait to try it ice cold!!

This is stupid delicious!!!

True farm to fork, for sure...

All from the garden - cucumbers, beets I pickled myself, shredded carrots, basil, topped with pickled quail eggs from my quail (using dill from my garden), and a few non garden/farm items, including feta and pickled peppers.

Drizzled this with some balsamic and creamy garlic dressing ......

Make farm to table breakfast with me! Everything but the butter, salt and pepper were raised, grown or harvested right here on the farm! The water is even from my well. Simple, healthy, and absolutely DELICIOUS!!!
