If you’re looking for an easy meal prep lunch that’s fresh, filling, and loaded with veggies, this Pesto Chickpea Pasta Salad is it. 🌿

It’s packed with:
🥒 Crunchy vegetables
🫘 Fiber-rich chickpeas
🍝 Pasta for energy
🌱 A bright pesto-lemon dressing that brings everything together

Ingredients
• 8 oz short pasta
• 1 can chickpeas, rinsed & drained
• 1 cup cherry tomatoes, halved
• ¼ cup diced red onion
• 1 bell pepper, diced
• 1 medium zucchini, diced
• 1 cup cucumber, chopped
• ½ cup basil pesto
• 2 Tbsp fresh lemon juice
• ¼ cup grated Parmesan (plus more for serving)

Directions
1️⃣ Cook the pasta, drain, and rinse with cold water.
2️⃣ Chop the vegetables.
3️⃣ Mix together the pesto, lemon juice, and Parmesan.
4️⃣ Combine the pasta, chickpeas, and vegetables.
5️⃣ Toss with the dressing, chill, and enjoy!

Health is so much more than what’s on your plate.

When people hear the word “healthy,” they often think of food or exercise first. But true health is bigger than that.

For me, health looks like:
🥗 Nourishing my body with foods that provide the nutrients and energy I need for my day.
🍪 Enjoying foods I love without guilt.
🏃‍♀️ Moving my body in ways I genuinely enjoy.
💧 Staying hydrated.
😴 Prioritizing sleep, rest, and recovery.
🤝 Investing in meaningful relationships.
🙏 Connecting with God and nurturing my faith through prayer, Scripture, worship, and time in His presence.
🌿 Managing stress and giving myself grace in different seasons of life.

Health isn’t about doing everything perfectly.

It’s about creating habits that support your body, mind, and spirit while leaving room for joy, flexibility, and real life.

Because balance will always be more sustainable than perfection. ✨
