Meat prep!! (Yes, just meat— not “meal” 🤣)
Chicken thighs! I like boneless/skinless for convenience, but bone-in is always the best.
I remove from fridge, marinate for 2-3 hours on countertop (in a large bowl of course), and bake at 385 for about 30 minutes. Finish for 5 minutes on broil to get that crispy skin if you opted for bone-in cuts!
My marinade is an “Orange sauce” which I named it for its color, not to represent the citrus fruit or some kind of sweet sauce a la Panda Express. I love to use mustard and sriracha, with added vinegar, peanut oil, salt, pepper, parsley, and onion powder.
I prepped some red lentils alongside of my chicken, but they are in my fridge separately (indirect meal prep). That way I can grab a chicken if just want chicken, lentils if I just want lentils, or both for a meal.
Lentils are a great nutrient-dense carb with lots of fiber and as much protein as possible for a legume (please, fact check me on plant type). Personally flour-based carbs (such as bread) always leave me hungrier than before I ate, so my carbs of choice are lentils, potatoes, and fruit. Rice is another great option, but personally I feel the same effect as flour— I could eat it all day and not get full.
I avoided cheese/dairy for a long time but they are great calorie-dense options. I tend to eat lighter since I dislike the feeling of a full belly, so cheese and whey help me reach calorie goals without that full-belly feeling.
What’s your go-to healthy carb??
