One of the concepts closest to my heart at Prana & Bean was serving artisan sourdough pizza with fermented side dishes, encouraging our guests to eat with their hands.
For some, it felt unusual. For others, it sparked curiosity. A few immediately understood the deeper intention.
Across many ancient cultures, eating with our hands was never considered bad manners. It was a way of creating a direct connection with our food. Taking a moment to feel its texture, temperature and nourishment before taking a bite encouraged presence, gratitude and a slower, more mindful eating experience.
When we eat more slowly and intentionally, we often chew more thoroughly, become aware of fullness sooner, and engage more of our senses. It transforms a meal from simply consuming food into experiencing it.
Prana & Bean was never just about serving food. It was about inviting people to reconnect with simple traditions that have nourished humanity for generations.
Although closing the café has been one of the most emotional journeys of my life, I know it was only the beginning. The vision has grown beyond four walls, and I am excited to continue sharing these concepts in new ways.
