Things I’ve been cooking in my kitchen lately as a vegan chef and toddler mom 👩🏻‍🍳🌱

1. Asian-inspired tofu & rice bowls featuring edamame and mushroom rice (thank you .and for the inspo) + lots of sauerkraut ( makes my fave)

2. Fluffy pancakes on repeat - testing a recipe for a client and this one was TOUGH to get right 😅

3. Some sort of tumeric coconut curry is always in the rotation. Easy to put together, perfect for leftovers + sometimes toddler friendly (depending on her mood)

4. High protein pasta salad with balsamic baked veggies - who knew lupini pasta was a thing?

5. Maple sea salt granola - my fave riff on my cinnamon date granola (you can find it on the blog)

6. Tofu & chickpea flour ‘egg’ muffins - the best on-the-go breakfast option that works for me and my daughter (who btw is not fully vegan but is allergic to eggs)

7. Single serve dark chocolate chip cookies - my fave way to surprise my husband with dessert after dinner mid-week 🥰

8. Pillowy soft homemade flatbread - such a treat to have freshly baked! Love it with hummus or a tofu ricotta.

Let me know which recipe you want to see first! ♥️

Hard to believe I’m not withering away from protein deficiency after all these years, I know x

In all seriousness, sharing this because i hear from a lot of people how they wish they could be plant-based but they “need the protein” (which always makes me chuckle inside because cause it somehow implies that vegans don’t? 😅)

Eating a high-protein plant-based diet isn’t hard but it does require a bit of planning and awareness. Some things I do to make it easier as a busy toddler mom and business owner:

- always have a batch of air-fried tofu or tempeh in the fridge ready to add to salads or stir fries)
- stock canned chickpeas, kidney beans, cannellini beans in the pantry (easy protein-protein add-ins for hot meals)
- use a high-quality plant-based protein powder for smoothies (not sponsored but I like form nutrition)
- batch cook and freeze lentil or bean based stews and soups - easy to defrost for dinners on busy weeks

Also to be real with you guys, not every day is this perfect. Some days it’s a smoothie, coffee, toast crusts and running on fumes until after my daughter’s bedtime 🫠 but we do what we can and consistency wins over perfection in the long-run 🙏🏼
