Our passion for flavor alchemy, driven by innovation and a profound understanding of regional palates, allows us to create signature desserts and pastry menus that become million-dollar sensations. Mostly a self-taught pastry artist, I continuously seek to push boundaries and do things the way most chefs wouldn't. I have written my first baking book, Nouel's Nifty Chic Baking, in the hope of bringing original ideas to impress - possibly ones that will inspire you to think outside of the box and lead your own path.

I blame my mom for my passion for baking. 🤎

That passion took me to New York to study artisanal breads, into baking for clients with an Arabic twist, and eventually to saying YES when JP Anglo asked me to create a panaderia concept together.

Now we’re testing new recipes at Breadwinner Bakehouse and this BBQ pandesal pizza is already a favorite. 🍕

It was this time of the year when I applied for an inflight chef position at Etihad Airways. I grew tired of working in hotels and needed to see more of the world. I was asked: “do you know how to cook?” To which I replied “I am a pastry chef but sure I can fry an egg”. The rest was history. I flew for 5 years. It was one of the most incredible moments in my career. I cooked for celebrities, royalties and dignitaries. But the longing for that dream to whip up the best desserts and connections returned. Clipped my wings and the rest of that time brought me to where I am today. Are you one of those people who used to fly and have now lived their other dream?

Experienced this wonderful spread by Simy Mathews at Khadak | Dubai in celebration of Onam 🌼

Onam is one of Kerala’s most cherished festivals: a celebration of homecoming, harvest, abundance, and togetherness. And what better way to experience it than through an Onam Sadya, the traditional vegetarian feast served on a banana leaf, bringing together an incredible variety of dishes, flavours, textures, and traditions (the non-veg option was equally delish).

Such a beautiful reminder of how food carries culture and brings people together. Happy Onam!

Everyone’s talking about this giant croissant at Bakerist UAE - European Restaurant, French Bakery & Coffee Shop - so I took my team with me to help me finish up this humongous bread. It got us full throughout the day. As they say, you can’t keep creating you must consume, too! 😊
