One Tray Roast Chicken Recipe

A fibre filled, homey meal for cooler nights.

- Organic chicken
- Mingle seasoning of choice
- Olive oil
- Celtic or Himalayan salt
- Italian herbs mix
- Root vegetables (sweet potato, potato, pumpkin, carrot, beetroot)
- Greens: Broccoli, Green beans
- 4 garlic cloves halved
- 1 -2 lemons halved

Method:
- Butterfly chicken to cook faster
- Rub over olive oil and seasoning (both sides)
- Slice into cubes and toss root vegetables in oil season with Italian herbs and some salt
- Spread vegetables across tray and leave space for chicken
- Add the seasoned chicken to tray
- Place garlic cloves and lemon among tray
- Roast fan forced for 45-55mins
- Add your green vegetables 15-20mins before chicken is ready. Coat these in pan juice or light olive oil

TIP: keep the bones and make a chicken bone broth

Evening meals don’t need to be perfect, but they do need to be enough.

It’s common for dinner to be whatever is quickest or easiest, especially when the day has been full. But if the body goes into the night slightly under-fuelled, it can show up later in small ways, lighter sleep, waking, or just feeling less settled.

A simple, balanced meal tends to work best. Something like protein, carbohydrates, and a bit of fat, chicken or tofu, rice or potatoes, vegetables, olive oil. It doesn’t need to be elaborate, just consistent enough that the body feels supported.

It can also help to keep the portion size small & eat at least 3hrs before bedtime, so your body has digested & can enter into its rest & repair state.

It’s one of those quiet inputs that doesn’t get much attention, but can make a difference over time.

Once sleep becomes something you’re watching closely, it can start to feel harder than it needs to.

You might notice yourself thinking about it before you even get into bed, wondering how the night will go, or how you’ll feel the next day if it doesn’t. It’s a very understandable response, but it can also keep the body slightly alert.

So it’s not just the lack of sleep that’s tiring, it’s the ongoing awareness around it.

This is often where things feel stuck. The body is tired, but not quite settled.

It doesn’t mean anything is broken. It usually just means the nervous system hasn’t fully switched out of that watchful state.
